Special Dahi Malai Chicken is one of the most epic desi dishes. Combine it with a naan and some raita and have this finger-licking dish at the comfort of your home!

Ingredients:

  • Chicken Boneless ½ kg
  • Yogurt 750 gm
  • Roasted gram flour as required
  • Cream 2 cups
  • Whole black pepper 4 – 6 tbsp
  • Clarified butter oil 1 cup
  • Garlic paste 3 tbsp
  • Ginger paste 2 tbsp
  • Ginger julienned 2 tbsp
  • Green chilies chopped 3-5
  • Salt to taste

 

Method:

Heat oil, add black pepper fry on very low flame for 3 to 5 minutes then remove from oil and crushed coarsely immediately.
In the same oil add chicken with 2 pinch of salt and fry well until chicken color lightly changed and chicken moisture evaporates completely.
Now add ginger garlic paste , salt and half amount of Julienned ginger , chopped green chilies, mix well and fry well on low flame for 4 to 6 minutes.
Now add very little amount of water mix and cook covered until chicken is done. Keep flame low.
Now add yogurt and fried black pepper mix well , covered and cook over low heat. Now add cream Mix well
Garnish with fried black pepper and green coriander.

Ingredients:

  • Chapli kabab 6
  • Boiled chickpeas 250 gm
  • Garlic paste 2-3 tbsp
  • Ginger paste 2-3 tbsp
  • Coriander powder 1 tbsp
  • Red chili as required
  • Turmeric 1 tsp
  • Chopped ginger 2-3 tbsp
  • Yogurt beaten 125 gm
  • Salt as required
  • Tomatoes 2
  • Curry leaves 10-12
  • Butter 100 gm
  • Fennel 1-2 tbsp
  • Green coriander for garnish
  • Green chilies 6-8
  • Chopped onion 1
  • Oil for fry

Method:
Heat oil and fry chapli kabab & remove. Add boiled chickpeas fry till golden in color, remove. Cut fried kabab in lengthwise. Heat oil fry onion golden in color. except onion, yogurt, tomatoes, green chilies and curry leaves add all spices with water cook on low flame for 8 to 10 minute. Add kabab strips and chickpeas. Also add water cover and cook on low flame for 5-8 minute. Add melted butter then add curry leave and green chilies fry ell. Give temper and garnish with coriander, serve.

Ingredients:

  • Okras 250 gm
  • Onion chopped 1
  • Red chili powder 1 tbsp
  • Soya sauce 2 tbsp
  • Vinegar 2 tbsp
  • Salt 1 tsp

For Sauce:

  • Cream cheese 1-1/2 cup
  • Yogurt 2 cups
  • Roasted Gram flour or flour ½ cup
  • Chicken powder 2 tbsp
  • Garlic powder 1 tbsp
  • Ginger powder 1 tbsp
  • Tomatoes puree or tomatoes paste 2 cups
  • Brown sugar 2 tbsp
  • Salt to taste
  • Chopped garlic 6-8
  • Sesame oil 3-4 tbsp
  • Sesame seeds 2 tbsp
  • Green chilies as required
  • Dry red chilies 8-10

 

Method:

Mix all ingredients in bowl and marinate okras for 20 to 30 minute. Fry okara in hot oil and remove from the pan. Add onion fry till golden in color./
For sauce, Blend all ingredients well except cream cheese, sesame seeds and chopped garlic. Now add chopped garlic in the same oil and fry till light golden.
Now add blended mixture into fried garlic add little amount of water and cook covered on the low flame for 20 to 25 minutes. Add cream cheese and mix well and let it cook on low flame for another 3 to 5 minutes or until obtained desire consistency..

Now add fried okras and fried onions into the sauce mix gently and cook uncovered on low flame for 2 to 4 minutes. Add dry roasted sesame seeds.

Ingredients:

  • Potatoes 1 kg
  • Oregano 2-3 tbsp
  • Dried basil or mixed herbs 2 tbsp
  • Whole cumin 2 tbsp
  • Crushed red chilies to taste
  • Red chili powder to taste
  • Chicken powder 1 tbsp
  • Flour 250 gm
  • Water as required
  • Baking powder ½ tsp
  • Oil 2 tbsp
  • Ginger powder 1 tbsp
  • Garlic powder 1 tbsp
  • Green chilies chopped as required
  • Soya few
  • Chopped onion 1
  • Oil for fry

Method:
wash potatoes well and cut into wedges, soaked in water. Remove from water after 5 minute. Add flour, baking powder, red chili, salt, chicken powder, oregano and basil or mix herbs, oil and garlic powder. Make batter with cold water. Add potatoes in batter cook on medium flame. Heat oil in large pan add garlic, onion and cumin, cook on low flame. Add crushed red chilies cook. Except green chilies, soya and wedges add all ingredients cook on low flame for 8 to 10 minute. Also add water. When mixture is dries out add soya, green chilies and fried wedges for 5 minute. Remove from dish and garnish with green coriander, serve.
