Ingredients:

  • Rice 500 gm
  • Chicken with bone 200 gm
  • Quail 4 to 5
  • Prawn 8 to 10
  • Mutton chops boiled 4 to 5
  • Potato cubes boiled 1 large
  • Oil ¼ cup
  • Ginger & garlic paste 2 tbsp
  • Green chili paste 2 tbsp
  • Tomato slices 1 cup
  • Tamarind pulp ¼ cup
  • Yogurt ¼ cup
  • Salt to taste
  • Red chili crushed 1 tbsp
  • Turmeric powder 1 tsp
  • Whole spice powder 1 tsp
  • Red orange color few drops
  • Mint leaf ½ bunch
  • Fresh Coriander ½ bunch
  • Green chili small 4 to 5
  • Screw pine essence few drops
  • Fried onion ¼ cup

 

METHOD:
Heat oil add ginger garlic paste and green chilies paste fry well. Add chicken, batter, prawns and mutton chops cook well. Add all spices, yogurt, tamarind pulp and half tomatoes cook well. When all meat is done add potatoes, green coriander, mint, green chilies, remaining tomatoes and boiled rice. Add screw pine essence, red, orange color, fried onion and oil, leave for simmer.

Ingredients for Masala Mix:

  • Coriander 1 tbsp
  • Cumin 1 tbsp
  • Black pepper 1 tsp
  • Whole red chili 5 to 6
  • Cinnamon sticks 1 to 2
  • Cloves 5 to 6

For Gravy:

  • Chicken with bone 500 gm
  • Oil ¼ cup
  • Ginger & garlic paste 1 tbsp
  • Red chili powder 1 tbsp
  • Turmeric powder 1 tsp
  • Dry fenugreek 1 tbsp
  • Salt to taste
  • Tomato puree ½ cup
  • Fried onion ¼ cup
  • Yogurt ½ cup
    Coal for smoke

 

METHOD:
Heat oil in frying pan add all spices cook well and then grind in blender. Heat oil add ginger garlic paste cook well. Add chicken, red chili, turmeric, salt and fenugreek mix well. Add yogurt, tomato puree, water and fried onion mix well and leave for 15 to 20 minute to simmer. Give a smoke of coal.

Ingredients for Dough:

  • Flour 500 gm
  • Egg 1
  • Salt 1 tbsp
  • Water 1 cup

For Filling:

  • Chicken mince boiled ½ cup
  • Onion chopped 3 to 4 tbsp
  • Garlic chopped 1 tbsp
  • Green chili chopped 1 tbsp
  • Salt to taste
  • Coriander crushed 1 tbsp
  • Black pepper 1 tsp
  • Turmeric powder ½ tsp
  • Oil 2 tbsp

For Chutney:

  • Oil 3 to 4 tbsp
  • Onion chopped 1 medium
  • Garlic chopped 1 tbsp
  • Tomato puree 1 cup
  • Salt to taste
  • Coriander crushed 1 tbsp
  • Turmeric powder ½ tsp
  • Black pepper 1 tsp
  • Sugar 1 tbsp
  • Red chili crushed 1 tsp
  • Lemon juice 1 to 2 tbsp

For Flavored Yogurt:

  • Yogurt ½ cup
  • Garlic chopped 1 tbsp
  • Salt to taste

METHOD:
For Dough mix all ingredient to form dough and leave for 15 minute. Roll and cut into square pieces. For filling mix all ingredients in bowl. For chutney heat oil add onion and garlic cook well. Add all spices, tomato puree and lemon juice cook till sauce becomes thick. For flavor yogurt mix all ingredients. Keep filling on dough and seal it. in pan add all ashak boil for 15 minute. Pour yogurt in serving dish then keep ashak. Add chutney and pour yogurt, serve.
