Ingredients For Curd Slurry

  • sour curd (full fat) or sour yogurt, 1.5 cups/375 grams
  • water 3 cups
  • red chilli powder or cayenne pepper ½ teaspoon
  • turmeric powder (ground turmeric) ½ teaspoon
  • Garam Masala ½ teaspoon
  • asafoetida (hing) 1 generous pinch
  • Salt 1 to 1.5 teaspoon
  • gram flour (besan), 8 tablespoon/40 grams
  • For Onion Pakora
  • thinly sliced onions (tightly packed) 1 cup
  • besan (gram flour) 1 cup
  • red chilli powder ½ teaspoon
  • Garam Masala ½ teaspoon
  • carom seeds (ajwain) ½ teaspoon
  • Salt ⅔ to ¾ teaspoon
  • water ¼ cup
  • mustard oil or sunflower oil for shallow frying or deep frying
  • For Kadhi
  • chopped onions ⅓ cup
  • chopped ginger 1 tablespoon
  • chopped garlic ¾ to 1 tablespoon
  • fenugreek seeds (methi seeds) 8 to 10
  • green chillies 2
  • dry red chillies 2
  • cumin seeds 1 teaspoon
  • asafoetida (hing) 1 generous pinch
  • curry leaves 8 to 10
  • mustard oil or sunflower oil 2 tablespoons

Method
Making Curd Slurry
In a bowl take the sour curd and whisk it well till smooth
Add gram flour, red chilli powder, turmeric powder, garam masala powder and salt to the whisked curd.
Stir and mix everything again.
Stir very well to make a smooth mixture without lumps. If there are lumps, then break them with a wired whisk or a spatula or with your fingers. Set the curd slurry aside.
You can use a blender to make this mixture, but make sure you don’t over do it. You will get butter instead of a smooth blended curd.
Making Pakora For Kadhi
Take the gram flour in a bowl and add carom seeds, red chili powder, garam masala powder and salt.
Add 1 cup thinly sliced onions.
Mix everything well and set aside covered for 30 minutes.

For chicken

  • 1 lb ground chicken
  • ¾ cup yogurt
  • 1 cup fried onions
  • 1.50 tsp salt, or to taste
  • 1 tbsp ginger garlic paste
  • ½ tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • ⅓ cup lemon juice
  • ½ cup corriander
  • Red chilli powder ½ tbsp
  • 1cup tomatoes
  • Biryani masala 2tbsp
  • Rice
  • 3 cups rice, washed
  • 1 cinnamon stick
  • 4 cardamom pods
  • 2 cloves
  • 6 cups water

For layering

  • Rooh kewra
  • Lemon sliced
  • Fried onions
  • Mint leaves
  • Zarda rung

Heat a pot and add oil. Add fried onions, ground beef, chilli powder, ginger garlic paste, turmeric, salt. Saute well for 2 minutes.
Add the biryani masala. and Mix well. Cook the beef until it’s 90% cooked.
Add in the yogurt and lemon juice. Saute.
Add coriander . Saute until the oil separates.
Rice
In a pot, boil around 6 cups of water. Add in the whole spices.
Once the water boils, add the rice.
Cook until the rice is 3/4 done. Drain immediately.
Layering
Layer rice and beef mixture in a pot.
Steam on low to medium heat for 15-20 minutes or until the rice is thoroughly cooked.
Mix well before serving. Serve hot, with yogurt chutney.
