Ladi Pav Recipe | Zarnak Sidhwa at Food Diaries


Flour 2 cups
Butter 4 tsp
Milk 1 cup
Milk powder 1-1/2 tbsp
Salt 1 tsp
Sugar 1 tbsp
Yeast 2 tsp
Milk for brushing
Butter for brushing

Mix flour, salt, milk powder, sugar and yeast. Add in lukewarm water and mix well. Add lukewarm milk as much is required. The dough will be sticky. But do not add any extra flour. Add the butter and knead well till it becomes smooth, soft and easy to handle. Transfer the dough to an oiled bowl and cover it. Let it rest for 2 hours in a warm place. The dough will double. Place it on a smooth surface and knead for another 10 minutes. Divide the dough into equal portions and shape in rounds. Grease a baking tin and arrange them close to each other, so that they touch each other. Cover the baking tin with a damp cloth and let it rest for another 1 hour. They will again rise up.  Preheat the oven at 200 degrees C. Brush the buns with milk and bake for 15 minutes or till the top is brown in color. When baked, brush some butter on the buns.
