Ingredients:

  • Boiled potatoes 4
  • Onion sliced 2
  • Chopped tomatoes 2
  • White cumin ¾ tsp
  • Salt, chili, turmeric as required
  • Oil ½ cup
  • Whole red chilies 3-4

Ingredients for Tempering:

  • Butter 4 tbsp
  • Chopped green chilies 2
  • Sliced ginger 1 tbsp
  • Green coriander for garnish

Method:
Boiled potatoes and chopped coarsely. Heat oil add sliced onion fry well till golden color comes. Add white cumin and whole red chilies fry well. Add chopped tomatoes, salt, chili & turmeric cook well. Add potatoes with ½ cup of water cook for 15 minute. For Tempering, heat butter add green chilies and ginger fry well. Stuff in potatoes and garnish with green coriander.

Ingredients for Mutton Curry:

  • Mutton ½ kg
  • Ginger garlic paste 1 tbsp
  • Mix all spice 1 tbsp
  • Green chilies 3-4
  • Onions 2
  • Red chili powder 1-1/2 tsp
  • Salt to taste
  • Oil ½ cup
  • Green coriander for garnish
  • Green chilies for garnish

Ingredients for Dalcha:

  • Boiled gram lentil 1 cup
  • Bottle gourd 8-10
  • Salt, chili, turmeric as required
  • Fennel ½ tsp
  • Tomatoes 1
  • Tamarind pulp 1 tbsp
  • Green chilies 3-4
  • Onion 2
  • Coriander powder 1 tsp
  • Oil ½ cup

Method:
Heat oil add mix all spice fry well. Also add onion cook well. Add mutton with ginger garlic paste, salt, green chilies, red chili powder and ginger garlic paste cook well. Add water cook till meat is done. For Dalcha, heat oil add onion fry well. Add salt, chili, turmeric, coriander, tomatoes and fennel cook well. Add bottle gourd cook well. Add boiled gram lenitl cook till bottle gourd is done.
Add ready meat masala with tamarind pulp and green chilies leave for simmer. When oil is separate garnish with coriander and mint.
