Ingredients:

  • Cauliflower ¼ kg
  • Carrots ¼ kg
  • Peas ¼ kg
  • Beans ¼ kg
  • Garlic 2 tsp
  • Salt 2 tsp
  • Chili powder 3 tsp
  • Onion seeds 3 tsp
  • Mustard seeds pounded 2 tsp
  • Oil 2 cups
  • Turmeric 2 tsp

 

 

Method:

Cut all the vegetables in small cubes and boil for just 5 mins, spread the boiled vegetables on a clean towel to dry, once dry mix in the garlic, salt, chili powder, onion seeds, mustard seeds, oil and turmeric, mix all well, keep for 3 days in sun for few hours every day, use after 5 days

Ingredients:

  • Boiled and grated potatoes 2 cups
  • Sweet potatoes boiled and grated 400 gm
  • Desiccated coconut 1 tbsp
  • Salt 1 tsp
  • Crushed red pepper 1 tsp
  • Ginger garlic paste 1 tsp
  • Chopped green chilies 4
  • Finely chopped onion 4 tbsp
  • Coriander leaves chopped 4 tbsp
  • Corn flour 4 tbsp
  • Oil for frying
  • Egg 2
  • Bread crumbs as required
  • mustard seeds 1 tsp
  • coriander powder 1 tsp

 

Method:

Boil potatoes and sweet potatoes, grate both, mix with salt. Heat 2 tbsp oil in a wok, add mustard seeds, crushed red pepper and both the grated potatoes, add chopped onion, chili powder, coriander powder desiccated coconut, ginger garlic, chopped green chilies cook for 5 mins, remove, cool, add in the boiled potatoes, mix well, make into balls, then into flat disc, roll in corn flour, dip in egg, roll in bread crumbs, shallow fry, serve with mint chatni.

Ingredients:

  • Mutton ½ kg
  • Oil ½ cup
  • Ginger garlic paste 2 tsp
  • Salt 1 tsp
  • Allspice 1 tsp
  • Chili powder 1 ½ tsp
  • Turmeric powder ¼ tsp
  • Coriander powder 1 tsp
  • Brown onion ½ cup
  • Yogurt ½ cup
  • Lady finger fried 250 gm
  • Boil rice to serve

Method:

Heat oil fry ginger garlic paste with mutton fry well, add all the spices mixed with yogurt, fry well, add 2 cups water, cook till mutton gets tender and little gravy left, add fried lady finger, allspice, leave it on dum, serve with roti.

Ingredients:

  • Boiled rice ½ kg full done
  • Carrots 2 large grated
  • Clarified butter ½ cup
  • Green cardamom crushed 6
  • Sugar ½ kg
  • Water ½ cup
  • Yogurt 1 tbsp
  • Salt ½ tsp
  • Coconut sliced 3 tbsp
  • Almonds sliced 2 tbsp
  • Pistachios sliced 2 tbsp
  • Khoya 1 cup

Method:

Heat ghee, add crushed green cardamom, fry for 1 min, add sugar, water , Salt and yogurt, cook stirring till sugar dissolves, add in boiled rice, cover and cook on full flame for 10 mins, then add in grated carrots, cook for another 5 mins, then lower flame, cook on dum for 10 mins. Lastly add khoya and nuts.

Ingredients to boil rice:

  • Soaked rice 750 gm
  • Salt 3 tbsp
  • Mixed whole spices as required
  • Bay leaf as required
  • Black cumin as required

Other Ingredients:

  • Oil 1 cup
  • Potatoes cut in halves 1 kg
  • Ginger garlic paste 2 tbsp
  • Tomatoes 4
  • Chili powder 3 tsp heaped
  • Turmeric ½ tsp heaped
  • Water ¼ cup
  • Salt 2 ½ tsp
  • Coriander powder 2 ½ tsp
  • Green chilies 10-12
  • Yogurt 1 ½ cup
  • Coriander leaves ½ bunch finely chopped
  • Mint leaves ½ bunches finely chopped
  • Plum 15
  • Allspice 1 tsp
  • Screw pine essence 1 tbsp
  • Yellow color ¼ tsp
  • Brown onion 1 cup heaped

Method:
Soak Sela rice 750 gm for 2 hours, boiled with 3 tbsp salt, mixed whole spices, bay leaf and black cumin now Heat oil, add ginger garlic, fry, add ½ cup brown onion, sliced tomatoes and fry with ¼ cup water till soft, add big pcs of potatoes with salt, chili powder, turmeric, coriander, whole green chilies, yogurt, fry well, add ½ cup water, cover and cook till potato tender and oil comes on top, remove oil in a cup, then in your potato mixture add aalu bukhara, coriander, mint, allspice, mix all well. In a pan, spread ¼ cup oil, ¼ cup water, half qty of boiled rice then add alu mixture, chopped hara masala, remaining rice, top with kewra and color mixture then remaining ground onion, drizzle the oil that we removed, leave it on dum for 15 mins, can be served with boiled eggs.
