Ingredients:

  • Flour ¾ cup
  • Cocoa powder ½ cup
  • Baking powder ¾ tsp
  • Baking soda ½ tsp
  • Salt ¼ tsp
  • Eggs 2
  • Caster sugar ½ cup
  • Light brown sugar ½ cup
  • Oil 1/3 cup
  • Vanilla essence 2 tsp
  • Buttermilk ½ cup
  • Frosting for chocolate buttercream:
  • Unsalted butter 1 cup
  • Icing sugar 3 ½ cups
  • Cocoa powder ½ cup
  • Cream or milk 3 tbsps
  • Salt ¼ tsp
  • Vanilla essence 2 tsp

 

Method :
Whisk the flour, cocoa powder, baking powder, baking soda and salt together. Beat the eggs, caster sugar, brown sugar, oil and vanilla together. Pour the wet ingredients into the dry ingredients. Then add the buttermilk. Stir until just combined, do not overmix. The batter will be thin. Pour or spoon the batter into the cupcake liners. Fill only halfway, to avoid spilling over the sides or sinking. Bake at 170 degrees C for 18-21 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting. Top with sprinkles.
Method for chocolate buttercream
Beat the butter. Add icing sugar, cocoa powder, cream, salt, and vanilla essence. Beat well. Add 1/4 cup more icing sugar or cocoa powder if frosting is too thin or another Tablespoon of cream if frosting is too thick.

Ingredients :

  • Chicken thighs ½ kg
  • salt 1/2 teaspoon
  • Black Pepper 1/2 teaspoon
  • Sesame Seeds 1 tablespoon
  • Oil 2 tbsp
  • Olive oil 1 tbsp
  • Garlic 2 teaspoons
  • Hot sauce 150 grams
  • Brown sugar 100 grams
  • Apple cider vinegar 2 tablespoons
  • Chilli flakes 1 teaspoon

 

Method :
Mix chicken thighs with salt, black pepper and marinate for 15 – 20 minutes. In a pan, add sesame seeds and toast. Heat oil in another pan, add marinated chicken thighs. Cook till the chicken is cooked thoroughly. Heat olive oil in a pan, add 2 teaspoons garlic, hot sauce, brown sugar, apple cider vinegar and cook. Add chili flakes, black pepper, salt and mix. Add chicken thighs and garnish with toasted sesame seeds.
