Mutton Badami is the classic combination of desi spices that makes it’s aroma divine and it’s taste irresistible.

Ingredients:

  • Mutton 750 gm
  • Almonds blanched /peeled 1 cup
  • Brown onion 4 tbsp
  • Ginger garlic paste 2 tbsp
  • Yogurt beaten ¾ cup
  • Chili powder 2 tsp
  • Coriander roasted n crushed 1 ½ tsp
  • Black pepper ½ tsp
  • Cardamom powder ½ tsp
  • Cloves 6
  • Black pepper ½ tsp
  • Star anise 1
  • Mace grinded ½ tsp
  • Cinnamon 1 stick
  • Milk ¼ cup
  • Saffron ¼ tsp
  • Screw pine essence 1 tbsp
  • Clarified butter ½ cup
  • Oil ¼ cup
  • Salt 1 ½ tsp

Ingredients for garnish:

  • Hard boiled eggs 2
  • Almond flakes as required

Method:
Soak saffron and warm milk and keep aside. Grind almonds into a powder, also grind fried onions to a fine paste,keep aside. Heat oil, add cinnamon stick, black pepper, star anise and cloves, add mutton, fry on high heat till mutton turns slightly golden, add ginger garlic paste with grounded almond and onion paste, all the powdered spices, 1 cup water, cover and cook for 20 mins, lower the flame, add yogurt, again cover and cook till mutton tender. finally add saffron milk, cardamom and mace powder, kewra, mix and simmer for 5 mins, dish out, garnish with hard boiled eggs, saffron, flaked almonds, serve hot with sheermaal.

Ingredients:

  • Boneless chicken cubes ½ kg
  • Rice flour 1 tbsp
  • Flour ½ cup
  • Corn flour 2 tbsp heaped
  • Chili powder 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Egg 1
  • Roasted &crushed cumin ½ tsp
  • Allspice ½ tsp
  • Coriander powder ½ tsp
  • Soy sauce 1 tbsp
  • Lemon juice 1 tbsp
  • Red color few drops
  • Salt 1 ½ tsp
  • Oil for deep frying

Ingredients for oil tempering:

  • Oil ¼ cup
  • Mustard seeds 1 tsp
  • Curry leaves 15
  • Crushed red pepper ½ tsp heaped

Ingredients for sauce:

  • Mayonnaise ¼ cup
  • Chili powder ½ tsp
  • Honey 1 tbsp
  • Mustard paste ½ tsp
  • Garlic paste ½ tsp
  • Sriracha sauce 1 tbsp
  • Salt pinch
  • Coriander leaves chopped 1 tbsp

 

Method:
Marinate chicken pieces with all the above ingredients except oil and rice flour, keep for few hours, just before frying add in rice flour, deep fry on medium high till chicken is golden brown about 10 mins, remove and drain.
Method for baghar
Heat oil, add mustard seeds, curry leaves, crushed red pepper, add fried chicken into this, mix well.
To make the sauce
Mix all the ingredients for sauce in a bowl.
To serve
Place the chicken in a bowl, top with 3 tbsp sauce on it, toss it well to coat the sauce evenly, you can add some more sauce into the chicken if you like or serve the sauce with chicken.

Ingredients:

  • Beef Mince ½ kg
  • Onion sliced 1
  • Mixed whole spices 1 tbsp
  • Tomatoes chopped 3
  • Green chilies chopped 3
  • Ginger garlic 1 tbsp
  • Salt 1 tsp
  • Chili powder 1 ½ tsp
  • Turmeric ¼ tsp
  • Allspice ½ tsp
  • Potatoes cubed 2 cups
  • Dill finely chopped 2 tbsp
  • Fenugreek chopped 2

 

Method:

Heat oil, add onion and whole spices, fry till light golden, add chopped fenugreek leaves, ginger garlic paste, chopped tomatoes and all masala, fry well then add mince, cover and cook till meat tender, add in chopped tomatoes with 1 cup water and chopped dill, cover and cook till potatoes tender. Lastly add green chilies, chopped coriander and allspice.
