Mutton Nalli Nihari & Handi Kabab Masala Recipe | Masala Morning | Shireen Anwar | 26 June

Ingredients:

  • Mutton bong 1 kg
  • Ginger garlic paste 2 tbsp
  • Prepared nehari masala 4 tbsp
  • Flour ½ cup
  • Wheat flour ½ cup
  • Salt 2 tsp
  • Bone marrow 3-4
  • Clarified butter 2 cups
  • Chili powder 3 tbsp
  • Water 10 cups
  • Masala for Nehari
  • Cinnamon ¼ cup
  • Green cardom 25 gm
  • Black cardamom 25 gm
  • Cloves ¼ cup
  • Anise seeds 1/2 cup
  • Poppy seeds ½ cup
  • Mace ¼ cup
  • Dry ginger ¼ cup
  • Star anise 20 grams
  • Long pepper 25 gm
  • Kachri powder ½ cup
  • Roasted chickpeas ¼ cup
  • Chili powder ½ cup

METHOD FOR MASALA:
Grind all together very finely, sieve it with a fine sieve, fill in bottle, label and use accordingly .

METHOD FOR NEHARI:
Heat clarified butter, fry ginger garlic, add in mutton pieces with chili powder, salt and nehari masala, fry well by sprinkling in little water, add in nalli and 10 cups hot water, cover and let it cook for 1 hour, stir flour and wheat flour together, make into a paste with water, add to the meat, cook on very low flame for 1 ½ to 2 hours, serve with finely sliced ginger, chopped green chilies, coriander leaves, lemon wedges and tandoori nan.

Ingredients for Kebab:

  • Mince ½ kg
  • Ginger garlic 1 tbsp
  • Roasted and crushed cumin 1 tsp
  • Coriander seeds crushed 2 tsp
  • Green chilies 4
  • Gram flour roasted 1 tbsp
  • Onion finely chopped ½ cup
  • Coriander leaves chopped 2 tbsp
  • Chili powder 1 ½ tsp
  • Salt 1 tsp
  • Allspice 1 tsp
  • Egg 1
  • Bread slices 2
  • water and Squeezed 2tbsp (for bread soak)

Ingredients for Curry :

  • Onion sliced thick 2
  • Tomatoes 2 cut into lengthwise 3
  • Capsicum cut lengthwise 1
  • Oil ¼ cup
  • Allspice ½ tsp
  • Ginger garlic 1 tbsp
  • Chili powder 1-½ tsp
  • Turmeric ½ tsp
  • Salt 1 tsp

METHOD FOR KEBAB:
Mix all the above ingredients for kebabs well in chopper, grind to a smooth paste, make oval shape kebabs, shallow fry in oil and keep aside.

METHOD FOR CURRY:
Heat oil, fry onion transparent, add ginger garlic paste with all the spices, then add julienne of vegetables, fried kebabs, leave it on dum.
