Ingredients:

  • Mutton ½ kg
  • Yogurt 250 gm
  • Papaya paste 1 tbsp
  • Whole red chilies 6
  • Cumin 2 tsp
  • Green chilies 2
  • Garlic 6 cloves
  • Ginger 1 piece
  • Tomato 1
  • Fresh coriander ½ bunch
  • Onions 2
  • Lemon juice 4 tbsp
  • Salt ½ tsp
  • All spice powder 1 tsp
  • Coal 1 piece
  • Oil ½ cup

Method:
In a blender add whole red chilies, cumin, green chilies, garlic, ginger, onions and yogurt. Mix well. Now add this mixture to the mutton. Add papaya paste, lemon juice, all spice powder and salt. Mix well and leave it for half an hour. Then cook on hot oil. Once it is tender give a coal smoke and serve hot.

Ingredients:

  • Potatoes ½ kg
  • Capsicums 250 gm
  • Onions 2
  • Garlic 4 cloves
  • Whole red chilies 6
  • Cumin seeds 1 tsp
  • Red chili powder 1 tsp
  • Turmeric powder 1 tsp
  • Salt 1 tsp
  • Tomatoes 250 gm
  • Green chilies 4-6
  • Coriander seeds 1 tbsp
  • Dried mango powder 1 tbsp
  • Asafoetida a pinch
  • Oil ½ cup
  • Fresh coriander for garnish

 

 

Method:
Cut potatoes and capsicums. Then heat oil and fry them well. Remove and set aside. Now heat oil and fry whole red chilies, cumin seeds and garlic. Then add onions and fry until golden brown. Now add tomatoes, red chili powder, turmeric powder, salt, coriander seeds, asafoetida and dried mango powder. Mix well and cook for about 2-3 minutes. Then add fried potatoes and capsicums. Cover and cook for about 10 minutes. Lastly add green chilies and garnish with fresh coriander. Serve hot.

  • Seekh kabab 1 packet
  • Tomatoes ½ kg
  • Yogurt 1 cup
  • Onion 1
  • Turmeric 1
  • Coriander powder 2 tsp
  • Cumin 1 tsp
  • Fennel seeds 1 tsp
  • Salt 1 tsp
  • Red chili powder 2 tsp
  • Green coriander ½ bunch
  • Green chili 4
  • Bay leaves 1
  • All spice powder ½ tsp
  • Cardamom 2
  • Cloves 2
  • Oil as required

Method:
Heat oil then add cloves ,bay leaves ,cardamom and cumin add .when aroma comes out then add onion and roast .then tomatoes ,turmeric, coriander powder ,fennel ,salt and red chili powder and yogurt then cook .when tomatoes well tender then roast for few minutes .after this add green coriander and green chili add and leave on dum .finally dish out and add fry seekh kabab and then sprinkling all spice powder and serve .
