- Olive oil 2 tbsp
- Onion, chopped 1
- Garlic cloves, chopped 2
- Tomato paste 1 tbsp
- Mutton mince 500 grams
- Oregano 1 tsp
- Pita breads, cut into triangles 4
- Capsicum, thinly sliced 1
- Olives 2/3 cup
- Mint leaves 1/2 bunch
- Thick strained yoghurt 1 cup
- Garlic clove, crushed 1
- Cucumber, finely chopped 1
- Olive oil 1tbsp
- Mint leaves 1/2 bunch
- Zest of lemon 1
- Salt ,black pepper as required
Heat oil. Add onion and garlic and cook until softened. Add tomato paste and cook, then add the mince, oregano and water. Season with salt and pepper, then cook until mince is done. Meanwhile, brush pita bread triangles with a little oil and place on a baking tray. Bake at 180 degrees c for 10 minutes or until golden. For the tzatziki, combine all the ingredients in a bowl and set aside. To serve, place the pita chips on a plate and top with mince, tzatziki, capsicum and olives.
- Whole-wheat flour 200gm
- Oats (ground) 30gms
- Icing sugar- 90 gm
- Baking powder 1 tsp
- Cold butter 120 gm
- Salt 1/2 tsp
- Milk 50-60 ml
Sift the dry ingredients. Mix the cold butter in it to resemble crumbs. Bring the dough together by putting milk little by little. If flour is needed do add just a tbsp more. Roll out the dough about 1/4” thick, in between two butter paper sheets. Cut rounds with a cookie cutter. Gently lift with a flat spatula and put it on a silicon-lined baking tray. Take a toothpick and prick the rolled-out discs. Bake in a pre-heated oven at 180 degrees c for approximately 20-25 minutes.
Let it cool completely and store in an airtight container.
