- Fish fillets ½ kg
- Unsalted butter (melted) ¼ cup
- Lemon juice 2 tablespoons
- Lemon zest 1
- Garlic minced 5 cloves
- Red chili flakes ¼ tsp
- Hot sauce 1 tbsp
- Chili garlic sauce 2 tbsp
- Dried parsley 1 teaspoon
- Capers 2 tablespoons
- Salt and ground black pepper to taste
Ingredients to Garnish:
- Sliced lemon 1
- Chopped fresh parsley as required
Mix melted butter, lemon juice and zest, minced garlic, chilli flakes, dried parsley, salt, and pepper. Season the fish fillets with salt and pepper. Arrange them on the bottom of the a greased baking dish. Drizzle with the lemon butter mixture, top with capers and lemon slices.
Transfer to a preheated oven and bake at 180 degrees C for about 10-12 minutes, or until fish flakes easily with a fork. Garnish with chopped parsley and serve immediately.
- Butter 125gm
- Honey ¼ cup
- Vanilla essence 1tsp
- Egg 1
- Ripe banana 1 large
- Flour 225gm
- Milk ¼ cup
- Cream cheese 160gm
- Flaked coconut, toasted 1/3 cup
- Finely chopped pistachios as required
- Honey 1tbsp
Beat the butter, honey and vanilla in a bowl until pale and creamy. Add the egg and beat to combine. Beat in the banana (the mixture will appear slightly curdled, but that is okay)./gradually fold in the flour and milk, in alternating batches, until the mixture is smooth and combined. Drop level tablespoons of the mixture onto the trays, allowing room for spreading. Bake at 180 degrees c for 15 minutes or until light golden. Transfer to a wire rack to cool completely. Stir the cream cheese and extra honey in a small bowl until combined. Spread over the cooled cookies. Sprinkle with coconut and pistachios.
