- Chocolate cream biscuits 20 dark
- Unsalted butter 175gm
- Crunchy peanut butter 400gm
- Icing sugar 175g
- Dark chocolate, chopped 200gmaa
Finely crush the dark chocolate cream biscuits in a food processor. Melt 75gm butter and combine with biscuits. Press into the base and sides of a loose-bottomed tart pan and chill for 30 minutes until firm. Combine peanut butter and icing sugar in a bowl and spread in the tart base. Melt chocolate and remaining 100gm butter in a bowl over a pan of simmering water. Stir until melted, then cool slightly. Spread over the peanut butter layer and chill for 30 minutes until firm.
- Chicken breasts ½ kg
- Salt 2 ½ tsp
- Pepper ½ tsp
- Flour 1 cup
- Butter 5 tbsp
- Olive oil 4 tbsp
- spring onion chopped 1
- Garlic, minced 1 tbsp
- Chicken stock 1-1/2 cups
- Lemon juiced 1
- Lemon zest 2 tsp
- Capers 2 tbsp
- Parsley, chopped as required
Season the chicken breasts with 2 teaspoons salt and pepper on both sides. Place the flour on a plate. Dredge the chicken in the flour and shake off any excess. Heat half the butter and olive oil in a pan and add the chicken once the butter has melted. Sauté until golden brown. Set the chicken aside. Add the spring onion and garlic to the pan and sauté. Add the stock and simmer until reduced by half. Stir in the remaining butter, capers, lemon juice and zest and salt. Garnish with parsley. Serve the chicken with the piccata sauce poured over the top.
