Ingredients:

  • Split gram lentil boiled 1 cup
  • Ghee ¼ cup
  • Ginger garlic paste 1 tbsp
  • Tomato chopped 2 – 3
  • Yogurt ¼ cup
  • Tamarind pulp ¼ cup
  • Curry leaves 8 – 10
  • Red chili whole 4 – 5
  • Salt as required
  • Black pepper crushed ½ tsp
  • Mustard 1 tsp
  • Fenugreek 1 tsp
  • Cumin crushed 1 tsp
  • Whole coriander crushed 1 tsp
  • Green coriander chopped 1 tbsp
  • Fresh soya chopped 1 tbsp
  • Green chili big julienne 2 – 3
  • Ginger julienne as required

METHOD:
Heat clarified butter add mustard, fenugreek, whole red chilies and curry leaves fry well. Add ginger garlic paste, tamarind pulp, tomato and yogurt cook till oil and clarified butter is separate. Add white lentil then cumin, crushed coriander, black pepper and salt mix well. Add chopped soya and green chilies fry well. When oil and butter is separate add coriander and ginger fry well.

Ingredients:

  • Beef minced 500 gm
  • Beef fat 50 gm
  • Bread 2 sliced
  • Onion chopped 1
  • Ginger garlic paste 1 tbsp
  • Green chili paste 1 tbsp
  • Salt as required
  • Red chili powder 1 tbsp
  • Coriander powder 1 tbsp
  • Turmeric powder ½ tsp
  • All spice powder 1 tbsp
  • Dry mango powder 1 tsp
  • Oil for frying

METHOD:
Mix beef and all ingredients in mixing bowl. Blend mixture in chopper. Keep mixture in fridge for 15 to 20 minute. Make shape of kabab. Heat oil in wok adds kabab and cook on low flame.

Ingredients:

  • Chicken with bone 500 gm
  • Green chili big 6 to 8
  • Lemon slices 8 to 10
  • Oil ¼ cup
  • Garlic chopped 1 tbsp
  • Tomato puree 1 cup
  • Yogurt ¼ cup
  • Salt as required
  • Turmeric ½ tsp
  • Fennel 1 tsp
  • Cumin 1 tsp
  • Whole coriander 1 tsp
  • Red chili crushed 1 tsp
  • Fenugreek 1 tsp
  • Green coriander chopped as required

METHOD:
Heat oil add fenugreek and garlic sauté well. Add chicken fry well. Add fennel, cumin, whole coriander, turmeric, crushed red chilies and salt cook. Add water leave for simmer. When chicken is done add yogurt and tomato puree cook till oil and gravy is separate. Add green chilies and lemon slice leave for simmer for 5-7 minute.

  • Rice 500 gm
  • Oil ¼ cup
  • Ginger & garlic paste 1 tbsp
  • Green chili paste 1 tbsp
  • Onion slices ½ cup
  • Fennel 1 tbsp
  • Whole coriander 1 tbsp
  • Salt as required
  • Chicken powder 1 tbsp
  • Long 5 – 6
  • Cinnamon 2 – 3
  • Star anise 5 – 6
  • Water as required

METHOD:
Heat oil add onion sauté well. Add ginger garlic paste and green chilies cook well. Add all spice cook for 1 to 2 minute. Add water bring to boil. Add rice cook till water is at rice level. Leave for 20 minute.
