Dabeli is exquisite Indian dish that has a great crunch to it. The combination of Potato boiled & mashed is a captivating experience on its own. The topping of Roasted peanuts makes it even more flavorsome.

Ingredients:
For Dabeli Masala:

  • White cumin seeds 1 tbsp
  • Coriander seeds 1 tbsp
  • Fennel seeds 1 tbsp
  • Whole black pepper 1 tsp
  • Cinnamon sticks 1 stick
  • Black cardamom 2 to 3
  • Cloves 6 to 8
  • Star anise 3 to 4
  • Bay leaf 1 leaf
  • White Sesame seeds 1 tbsp
  • Coconut 2 tbsp
  • Kashmiri chili 1 to 2
  • Turmeric powder ½ tsp
  • Raw mango powder 1 tbsp
  • Salt 1 tbsp
  • Sugar 1 tbsp
  • Tamarind pulp ¼ cup

For Making:

  • Oil 3 to 4 tbsp
  • Potato boiled & mashed 500 gm
  • Coconut crushed for garnish
  • Fresh coriander chopped for garnish
  • Sev for garnish
  • Roasted peanut for garnish
  • Pomegranate seeds (if available) for garnish
  • Buns 3 to 4
  • Onion chopped 1 large
  • Green chutney as required
  • Tamarind chutney as required

METHOD:
For Masala add all ingredients in frying pan fry well, blend well. In mixing bowl add 2 tbsp of masala powder, tamarind pulp and water to form paste. Heat oil in fry pan and form into paste. Add mashed potatoes mix well. Remove in dish add green coriander, sev, roasted peanut and onion. Cut bun form center add green chutney and tamarind chutney. Garnish with potato bhurta, sev, crushed coconut, peanut, pomegranate and green coriander.

Ingredients:
KOFTA:

  • Potato boiled and mashed 1 cup
  • Green peas boiled ¼ cup
  • Carrot small diced boiled ¼ cup
  • Capsicum small diced ¼ cup
  • Cauliflower small chunks boiled ¼ cup
  • Salt to taste
  • Turmeric powder 1 tsp
  • Red chili powder 1 tbsp
  • All spice powder 1 tsp
  • Green chili big chopped 2
  • Fresh coriander chopped 1 tbsp
  • Egg 1
  • Oil for frying

 

BIRYANI:

  • Sela rice 500 gm
  • Oil ¼ cup
  • Ginger & garlic paste 1 tbsp
  • Green chili small paste 2 tbsp
  • Tomato puree 1 cup
  • Yogurt ½ cup
  • Salt to taste
  • All spice powder 1 tbsp
  • Turmeric powder 1 tsp
  • Red chili powder 1 tbsp
  • Screwpine essence few drops
  • Green chili small 5 to 6
  • Zarda color few drops

METHOD:
Koftay banana kay liye mixing bowl men ublay aaloo, tamam sabziyan, tamam masalay or 1 anda dal ker mix ker lain phir darimiyan ay size kay koftay bana ker anday men dip ker kay deep fry ker lain.
Biryani banana kay liye pan men oil garam ker kay ginger, garlic or mirchon ka paste dal ker bhoon lian phir tomato puree, dahi, or tamamm asalay dal ker atna pakaen kay oil or gravy alag hojae ab sab ithari mirchen dal ker upper se ublay chawal shamil Karen phir oil, kerva essence or rang dal ker chawlon per koftay rakhker 10 se 12 minutes ka dum de lain.

Ingredients:
CHOCOLATE SPONGE:

  • Flour 100 gm
  • Sugar 125 gm
  • Cocoa powder 25 gm
  • Eggs 5
  • Baking powder (optional) 1 tsp

ASSEMBLING:

  • Chocolate sponge 2 lbs
  • Cocoa haze 200 gm
  • Cream 200 gm
  • Milk as required
  • Chocolate ganache 200 gm

METHOD:
Beat egg and sugar in mixer. In mixing bowl add flour, cocoa powder and baking powder mix well. Mix flour mixture into egg mixture and fold into 9×9 inch mould bake at 180C for 30 minute. For ganache mix chocolate hazelnut in chocolate ganache.
