Ingredients:

  • Butter 200 gm
  • Dark chocolate 200 gm
  • Caster sugar 1 1/2 cups
  • Eggs 4
  • Cocoa powder 1/3 cup
  • Flour 1 cup
  • Dark chocolate biscuits 24
  • Mini dark chocolate biscuits (chopped) as required

 

Method:
Melt butter and chocolate in a saucepan until smooth. Remove from heat. Stir in sugar. Cool few minutes. Add eggs, cocoa and flour. Stir to combine. Pour half the batter into a greased and lined pan. Top with whole biscuits, then remaining batter. Top with mini biscuits. Bake at 190 degrees c for 30 minutes or until top is just firm. Cool in pan completely. Cut into pieces after few hours.

Ingredients For Schezwan Sauce:

  • Cayenne peppers 18-20
  • Sesame oil 3-4 tbsp
  • Garlic (chopped) 10 cloves
  • Ginger (chopped) 1/2 tbsp
  • Soy sauce 1/2 tsp
  • White vinegar 1 tbsp
  • Tomato puree 1.5 tbsp
  • Salt to taste

 

For The Noodles:

  • Prawns 10
  • Onion (sliced) 1
  • Carrot (chopped) 1
  • Beans (chopped) 1/4 cup
  • Capsicum (chopped) 1
  • Spring onions (chopped) 2
  • Rice noodles 2 cups
  • Szechuan sauce 4 tbsp
  • Salt to taste
  • Sugar 1 tsp
  • Garlic (chopped) 1 tsp
  • Green chilies (chopped) 2
  • Oil as required

 

 

 

Method For Szechuan Rice Noodles:
soak cayenne peppers in hot water for 30 minutes and grind to paste. In a pan, heat the oil. Add garlic, ginger and sauté for a minute. Now add tomato purée, soy sauce, vinegar, salt with the ground red chili paste. Add little water and simmer, cook till the oil separates.

Method For The Noodles:
soak the rice noodles in hot water till soft. Heat a wok with some oil. Lightly sauté the prawns with little salt for just about 2 minutes and set aside. Add chopped garlic, ginger, green chilies, sliced onion. Sauté for few minutes and then add the vegetables. Cook for few minutes and then add the Szechuan sauce. Mix in the prawns, salt and sugar. Fold in the soaked and drained noodles, mix well and serve.
