Ingredients:

  • Ladyfingers ½ kg
  • Gram flour ½ cup
  • Rice flour 2 tbsp
  • Caraway seeds ½ tsp
  • Red chili powder 1 tsp
  • Green chilies (slit) 2 tsp
  • Cumin seeds (crushed) 2 tsp
  • Coriander seeds (crushed) 1 tsp
  • All spice powder ½ tsp
  • Salt 1 tsp
  • Garlic (chopped) 1 tsp
  • Ginger 2 tsp
  • Curry leaves 7-8
  • Water 3-4 tbsp
  • Oil (for frying) as required

 

Method:
In a bowl add gram flour, rice flour, caraway seeds, red chili powder, green chilies, crushed cumin seeds, crushed coriander seeds, all spice powder, salt, garlic, ginger, curry leaves and water. Mix well. Then add ladyfingers in the prepared mixture and mix well. Now heat oil and fry the ladyfingers until golden brown. Serve hot.

Ingredients:

  • Chicken (karahi pieces) ½ kg
  • Ginger garlic paste 1 tbsp
  • Onions (sliced) 2
  • Tomatoes 375 gm
  • Bay leaf 1
  • Green cardamoms 3-4
  • Cloves 4
  • Yogurt ½ cup
  • Cayenne pepper powder 1 tsp
  • Coriander powder 1 tsp
  • Sugar 1 tsp
  • Salt 1 tsp
  • Cumin seeds 1 tsp
  • Green chilies as required
  • Fresh coriander as required
  • Oil ½ cup

 

Method:
In the chicken add yogurt and ginger garlic. Marinate for about half an hour. Then heat oil, add bay leaf, green cardamoms, cloves and cumin seeds. Fry well. Now add sliced onions and fry well. Then add tomatoes, cayenne pepper powder, coriander powder, sugar and salt. Cook well. Now add marinated chicken. Cover and cook well until the chicken is cooked properly. Then add green chilies and fresh coriander. Cook for about 5 minutes. Lastly dish out and serve.

  • Basmati rice ½ kg
  • Ladyfingers ½ kg
  • Fresh coriander 1 bunch
  • Cloves 4
  • Onion 1
  • Cumin seeds 1 tsp
  • Salt 1 tsp
  • Green chilies 4
  • Clarified butter or butter 4 tbsp
  • Yellow color a pinch
  • Bay leaf 1
  • Oil for frying

 

Method:
Heat oil and fry the ladyfingers. Remove and set aside. Then heat clarified butter and fry the onion. Now add cloves, cumin seeds and bay leaf. Fry well. Then add 2 cups of water along with rice and salt. Mix well. Once the water is cooked add yellow color. Cover and cook well. Lastly add fried ladyfingers, green chilies and garnish with fresh coriander. Serve hot.
