Ingredients:

  • Unsalted butter 4 oz
  • Dark chocolate 6 oz
  • Eggs 2
  • Egg yolks 2
  • Sugar 1/4 cup
  • Salt to taste
  • Flour 2 tbsp

 

Method:
Butter and flour four ramekins. Tap out the excess flour. Set the ramekins on a baking sheet. Melt the butter with the chocolate in a saucepan. Beat the eggs with the egg yolks, sugar and salt until thickened and pale. Whisk in the chocolate butter mixture until smooth. Add the flour. Spoon the batter into the prepared ramekins and bake at 190 degrees C for 12 minutes, or until the sides of the cakes are firm but the centers are soft. Let the cakes cool in the ramekins for 1 minute, then cover each with an inverted dessert plate. Carefully turn each one over, let stand for 10 seconds and then unmold. Serve immediately.

Ingredients:

  • Minced chicken ½ kg
  • Green peas ½ cup
  • Green chili (chopped) 1
  • Cumin seeds ½ tsp
  • Coriander powder 1 tbsp
  • All spice powder ⅓ tsp
  • Roasted cumin powder ½ tsp
  • Salt to taste
  • Bay leaf 1
  • Cloves (powdered) 2
  • Green cardamom (crushed) 1
  • Tomato (chopped) 1
  • Onion (diced) 1
  • Garlic (minced) 2 cloves
  • Ginger (grated) 1 tsp
  • Olive oil 2 tbsp
  • Coriander to garnish

 

Method:
Heat oil. Add the cumin seeds, powdered cloves, cardamom and bay leaf and cook until fragrant. Add the onions, garlic, green chili and ginger and continue to cook till the onions turn translucent. Add the tomatoes along with all the dry spices. Cover and cook till the tomatoes are soft and fully cooked and the oil begins to separate. Now add the chicken mince, peas and little water. Cover and cook till the chicken mince is fully cooked.

  • Capsicum (sliced) 1
  • Onion (sliced) 1
  • Spinach leaves (chopped) ½ cup
  • Gram flour 4-6 tbsp
  • Chili powder ½ tsp
  • Dry mango powder ½ tsp
  • All spice powder ½ tsp
  • Salt to taste
  • Oil to frying
  • Yogurt to serve
  • Coriander to garnish

 

Method:
Mix all the ingredients together. Heat oil, put mixture with a spoon and cook each fritter till crisp and brown. To serve, put a teaspoon of the chicken mince on an appetizer spoon. Top with a warm fritter, some yogurt and fresh coriander and serve.
