Ingredients:

  • Mutton ½ kg
  • Oil ½ cup
  • Yogurt ½ cup
  • Onion 1 cup chopped
  • Ginger garlic paste 1 tbsp
  • Tomato 2 blended
  • Allspice ½ tsp
  • Salt 1 tsp
  • Chili powder 1 ½ tsp
  • Turmeric ¼ tsp
  • Crushed coriander 1 tsp heaped
  • Green chilies chopped 2
  • Coriander leaves 2 tbsp chopped
  • Whole mixed spices 1 tbsp
  • Sambal oleak 1 tbsp
  • Coconut milk ½ cup

Method:

Heat oil add whole spices with chopped onion, fry, add ginger garlic paste with mutton, fry over low heat adding little water, add blended tomatoes with all the dry spices, fry for 5 mins, add yogurt with 1 cup water, cover and pressure cook for 20 mins until meat done. Open, add coconut milk, leave it on dum, lastly add chopped coriander and green chilies, serve with nan.

Ingredients:

  • Jumbo prawns 1packet
  • Bread crumbs as required
  • Ingredients for stuffing
  • Parmesan cheese 2 tbsp
  • Cheddar cheese 2 tbsp
  • Green chilies 2 finely chopped
  • Coriander leaves 2 tbsp finely chopped

Ingredients for batter:

  • Eggs 2
  • Milk 3 tbsp
  • Siracha sauce 2 tbsp
  • Sweet chili sauce 1 tbsp
  • Flour 3 tbsp

Method:

Mix all the ingredients for stuffing in a bowl, fill 1 tsp filling in prawns center and fold to form into prawn shape, coat in prepared batter, then roll in panko bread crumbs, deep fry for 5-7 mins, serve with tartar sauce.

Ingredients for rice:

  • Rice ½ kg
  • White cumin seeds ½ tsp
  • Black cumin seeds ½ tsp
  • Salt 1 tsp
  • Boiled peas ½ cup
  • Star anise seeds 2
  • Oil ¼ cup

Ingredients for chicken:

  • Boneless chicken cubes ½ kg
  • Carrot boiled cubes 1 cut
  • Capsicum cut in cubes 2
  • Tomato cut in cubes 2
  • Onion cut like shashlik 2
  • Cabbage julienne 1 cup
  • Ginger chopped 1 tbsp
  • Spaghetti boiled 1 cup
  • Salt 1 tsp
  • Crushed black pepper 1 tsp
  • Crushed red chilies 1 tsp
  • Soya sauce 2 tbsp
  • Sriracha sauce 2 tbsp
  • Sweet chili sauce 4 tbsp
  • Corn flour 1 tbsp
  • Oil ¼ cup

Ingredients for sauce:

  • Mayonnaise ¾ cup
  • Salt pinch
  • Crushed red pepper ½ tsp
  • Sugar 1 tbsp
  • Vinegar 2 tbsp heaped
  • Sweet chili sauce 2 tbsp
  • Orange red color 1 pinch

Ingredients for topping:

  • Green chilies sliced and fried 8-10
  • Garlic chopped and fried 4 tbsp

Method for rice:

Soak rice for 30 mins. Heat oil in a pan, fry white and black cumin seeds and star anise seeds, add rice with salt and boiled peas, fry for 2 mins, add 2 cups water, cover with lid, when water dries, leave it on dum until done.
Method to make sauce
Put all the ingredients for sauce in a bowl, mix well and keep aside.
Method for chicken
Heat oil in a pan, fry chopped ginger, add chicken cubes and fry for 2 min, add salt, crushed red pepper, crushed black pepper, all the sauces, fry for 5 mins, add all the vegetables, add 1 cup water when boiling thicken with corn flour paste, cook until thick, remove.

To assemble:

Put rice in a serving dish, spread with prepared sauce then put a layer of boiled spaghetti, put chicken mixture, garnish with fried green chilies and fried garlic, ready to serve.
