Ingredients for dipping:

  • Water 5-6 Cups
  • Salt ½ tbsp
  • Vinegar ½ Cup
  • Green chili paste 2-3 tbsp
  • Chicken 2 (leg pieces)
  • Red chili powder 1 & ½ tbsp
  • Garlic powder 1 tbsp
  • Salt to taste
  • Black pepper powder 1 tsp
  • Baking powder 1 & ½ tsp
  • Mustard powder 1 & ½ tsp
  • Soy sauce 2 tbsp
  • Chili sauce 2 tbsp

For coating ingredients:

  • Flour sifted 2-3 Cups
  • Salt to taste
  • Red chili powder 1tsp
  • Water 4-5 Cups
  • Oil for frying

 

Method:
In a bowl, add water, salt, vinegar green chili pastes and mix well. Add chicken pieces & dip properly and marinate for 4-5 hours. In a bowl, add chicken, red chili powder, garlic powder, salt, black pepper powder, baking powder, mustard powder, chili sauce, mix well and marinate for 30 minutes. IN one bowl, all-purpose flour & add water in another bowl. Mix flour with salt and red chilies coat marinated chicken pieces in all-purpose flour then dip into water & again coat in all-purpose flour. In a wok, heat cooking oil and fry chicken pieces on low flame until golden & crispy (10-12 minutes). Serve.

Ingredients:

  • Tomatoes chopped 2 cups
  • Bell peppers chopped 2
  • Onion chopped 2
  • Garlic cloves 4
  • Red chilies 2-3
  • Thyme 1 tbsp
  • Olive oil 4 tbsp
  • Salt 1 tsp
  • Pepper 1 tsp
  • Pasta 1 packet
  • Fresh basil to serve

 

METHOD:
Preheat the oven to 200°C/390°F.Combine the cherry tomatoes, peppers, onion, garlic cloves, chilies and thyme on a sheetpan. Drizzle with olive oil and season with salt and pepper. Place in the oven and allow to roast for 30 minutes until the vegetables are soft and starting to caramelize. Remove from the oven then transfer to a blender. Pour in water and blend until smooth. Pour the sauce into a saucepan and season to taste. Simmer gently while you cook the pasta.

Cook the pasta in salted water until al dente. Drain the pasta, reserving a cup of cooking water, and combine with the peri-peri sauce.
Add a splash of the pasta cooking water and toss to combine.
Then serve with fresh basil
