Ingredients:

  • Beef ½ kg
  • Ginger paste 2 tbsp
  • Salt to taste
  • Red chili powder 1 tbsp
  • Coriander powder 1 tbsp
  • Whole spices 1 tbsp
  • Curry leaves 1
  • Tomatoes 250 grams
  • Turmeric ½ tsp
  • Potatoes ½ kg

For rice ingredients:

  • Rice 500 grams
  • Mix all spices 1 tbsp
  • Salt to taste

For layering ingredients:

  • Tomato slices 2
  • Green coriander ½ bunch
  • Mint ½ bunch
  • Green chilies 10-12
  • Lemon juice 2 tbsp
  • Fried onion ¾ cup
  • Nutmeg, mace powder ¾ tsp
  • All spices powder 1 tsp
  • Yogurt 200 grams
  • Yellow food color as required
  • Screw pine few drops
  • Clarified butter 1 cup

Method:
In beef and potatoes add salt ,red chili ,turmeric ,coriander powder ,curry leaves ,ginger paste ,tomato and all spices and mix and add water then cook till then meat tender then add 2-1/2 cup of chicken stock .now set the meat in corner and add the stock .then add yogurt .now in rice add salt and all spices and cook half .after this water remove and add meat and stock then heat clarified butter and pour in rice .after this in water add yellow food color and leave on dum and then serve .

A basic Hyderabadi beef biryani recipe could include these steps, since you are using beef, it is important to make it in a pressure cooker which allows the meat to be cooked faster and quicker, however if you don’t have a pressure cooker you can normally cook it in a pot and wait for beef to get tender and soft, so you start off by adding thinly sliced onions in the pressure cooker, once they are brown, add beef along with garlic paste. Let it cook till you beef changes color then add tomatoes in it, and then either you can add your own spices and yogurt in it or you can add any packet of Biryani masala in it. Let it cook for good 5-10 minutes, then add water till the beef is simmered in it. Finally let it cook for good 20 minutes to allow the beef to be perfectly cooked, then add some small pieces of potatoes and let it cook till the water is evaporated. Then set aside your gravy and make some delicious rice. Boil water and add rice and some spices in it, make sure the rice are parboiled not completely cooked. Then start layer rice and gravy and then again some rice and gravy, once that is done cover it and steam cook it for another 20 minutes and then your biryani will be ready to serve and eat!!

Biryani could be eaten with sidelines like raita, chutneys, achar and salads. You can make different kinds of raitas like a coriander raita or a mint one and then finally end your perfect meal with some great dessert like kheer, zarda rice or some shahi tukde.

Ingredients:

  • Gulabjamun 500g
  • Khoya 250g
  • Egg 4
  • Milk 1-1/2cup
  • Small cardamom (powder) 1/2tsp
  • Yellow (food color) few drops
  • Almonds, pistachios for garnishing
  • Silver paper 1
  • Clarified butter 2tbsp
  • Semolina 1tbsp

 

Method:
Put gulabjamun, koya, semolina, milk, small cardamom, eggs and yellow food color in a blender and blend them. Now set it on a greased dish and bake it at 180 degrees for 20mins. When it gets set take it out and garnish it with almonds, pistachios and silver wrap serve it cold.

Ingredients:

  • Yogurt 1 cup
  • Red chili powder ¼ tsp
  • Black pepper powder ½ tsp
  • Cumin powder ½ tsp
  • Chopped onion 1
  • Chopped coriander, green chilies 2 tbsp
  • Chaat masala ½ tsp
  • Salt to taste
  • Black salt 2 pinches

Method:
Beat yogurt and mix all ingredients.
