Ingredients for Dough
- Flour ½ kg 4 cups
- Baking soda 1 tsp
- Yeast 1 tsp heaped
- Salt 1 tsp
- Dry milk powder 3 tbsp
- Water as required to knead
Ingredients for Filling
- Chicken mince ½ kg
- Onion grinded 2
- Egg yolks 2
- Milk 50 gm
- Chili powder 1 tsp
- Coriander powder 1 tsp
- Crushed red pepper 1 tsp
- Mint leaves chopped 2 tbsp
- Coriander leaves chopped 2 tsp
- Salt 1 tsp
- Green chilies chopped 3
- Sesame seeds for garnish
- Crushed ginger 1 tbsp
- Clarified butter for brushing
Mix all above very well, knead with water to a soft dough, leave it covered with a wet cloth for 45 mins.
METHOD FOR FILLING
Take mince in a bowl, add grated onion, squeeze out all the water from a fine sieve, add egg yolk, coriander powder, milk powder, chili powder, crushed red pepper, crushed ginger 1 tbsp, mint, green chilies, add all to the mince with salt, mix very well with your hands, punch down dough, make balls, roll to a quarter plate size, take a ball of mince, put in center and start folding it like a potli, and again form it into a ball, roll the ball with mince lightly by sprinkling flour on the nan, put water, sprinkle with sesame seeds, chopped coriander and mint, prick very well with your hands, bake for 15 to 20 mins on 170 D, remove, brush with ghee, sprinkle with water and serve.
