Ingredients:

  • Mutton boiled ½ kg
  • Oil ¼ cup
  • Curry leaves 15 – 20
  • Onion ground 2
  • Ginger garlic 1 tbsp
  • Green chilies sliced 6
  • Chili powder 1 tsp
  • Turmeric ¼ tsp
  • Salt 1 tsp
  • Tomatoes chopperized 2
  • Sugar 1 tsp
  • Tamarind pulp 2 tbsp
  • Onion rings to serve

 

Method:

Boil mutton until nearly done. Heat oil, add curry leaves, fry for min, add onion, ginger garlic, fry for 7 – 8 mins, add in salt, chili powder, turmeric and boiled mutton, add chopperized tomatoes, fry well, cover and cook till mutton done. Lastly add green chilies, sugar, tamarind pulp, mix well, simmer for 10 mins, remove and serve on a sizzler on a bed of onion rings, garnish with half lemon and coriander leaves.

Ingredients:

  • Mutton small botties 500 gm
  • Chanay ki daal 1 cup
  • Ginger garlic 1 tbsp
  • Chili powder 1 ½ tsp
  • Turmeric ½ tsp
  • Onion chopped 1 cup
  • Tomatoes chopperized 4
  • Korma masala 1 packet
  • Coriander leaves 3 – 4 tbsp
  • Green chilies 4
  • Allspice ½ tsp

 

Method:

Heat oil, fry onion till light golden, add ginger garlic paste, tomatoes and mutton, fry well for 5 mins, add korma masala, chili powder, turmeric, fry well, add 2 cups water, cover and leave till mutton half done. Now remove the oil from the mutton and keep aside, add in daal, cover and cook till daal is nearly done, slightly mash the daal, add in chopped coriander leaves, green chilies, allspice, leave it on dum till daal and mutton tender. Lastly add in the oil, and serve with nan.

  • Beef brain boiled 1
  • Turmeric ½ tsp
  • Onion chopped 1 cup
  • Brown onion ground 2 tbsp
  • Ginger garlic 1 tbsp
  • Tomatoes chopperized 4
  • Yogurt ½ cup
  • Maghaz masala 2 tbsp
  • Chili powder 1 tsp
  • Salt 1 tsp
  • Coriander leaves 4 tbsp
  • Green chilies chopped 3
  • Oil ¾ cup

 

Method:
Beef brain boiled with ½ tsp haldi , Heat oil on a large tawa, fry chopped onion till golden, add ginger garlic paste, tomatoes chopperized, prepared maghaz masala, salt, chili powder, fry well, add boiled maghaz, break maghaz well, cover and cook for 10 mins, add yogurt with chopped greens, cover and cook till done, serve with nan.
