Sponge for ingredients:

  • Flour 2 -1/2 cup
  • Baking powder 1 tsp
  • Salt ¼ tsp
  • Unsalted butter 1 cup
  • Caster sugar 1- ½ cup
  • Egg 4
  • Vanilla essence 2 tsp
  • Butter milk 1 cup

Ingredients for icing :

  • Fresh cream ½ kg
  • Cream cheese 1 tub
  • Gelatin 2tbsp
  • Water 2 tbsp
  • Vanilla essence 1 tsp
  • Biscuit spread 4 tbsp

Method for sponge:
Mix the flour, salt and baking powder and set aside. In a fresh bowl, add the butter and caster sugar and beat well until the mixture is creamy.Add eggs one by one and beat until fluffy. Gradually add the flour mixture and butter milk one by one and beat well.. Pour the batter in 2 pans and bake at 350° for 20-25 minutes.

Method for icing:
Beat the fresh cream. Mix the cream cheese with the vanilla essence. Add lotus spread and gelatine mixture, and beat well . Put in the piping bag with the ’round nozzle Take a base, and put the first sponge layer on it. After icing the layer, add lotus spread, along with the crushed biscuits. Put on the second layer, and repeat the steps as above.. Decorate to your liking.

Ingredients:

  • Butter unsalted 170 gm
  • Castar sugar 100 gm
  • Brown sugar 100 grams
  • Eggs 3
  • Instant coffee 1 -1/2 tbsp
  • Hot water 1 tbsp
  • Vanilla essence 1 tsp
  • Flour 1-3/4 cup
  • Baking powder 1-1/2 tsp
  • Salt ¼ tsp
  • Milk 1/3 cup
  • Walnuts ½ cup

Ingredients for coffee icing :

  • Cream cheese 1 cup
  • Icing sugar 2 cups
  • Fresh cream 1 cup
  • Vanilla essence 1 tsp
  • Coffee 2 tbsp
  • Hot water 1 tbsp

Method:
Mix the flour, baking powder and salt. In a fresh bowl, add the butter and beat until creamy.. Add brown sugar, white sugar and vanilla essence, then beat well.
After this, add the eggs one by one, and beat until fluffy.Then, add the dry flour mixture.. Gradually, add the milk and coffee mixture, and beat until a creamy consistency is achieved. Finally, bake the mixture at 350° for 25-30 minutes.
Method for coffee icing . Mix all ingredients in the mixture.
Then, fold the walnuts in the icing.

Cheese sauce :

Ingredients:

  • Butter 2 tbsp
  • Flour 2 tbsp
  • Salt pinch
  • Pepper 1 pinch
  • Paprika powder ¼ tsp
  • Milk 1 cup
  • Cheddar cheese 1 cup
  • Yellow food coloring 1 pinch

Cottage cheese salad:

Ingredients:

  • Iceberg 1 cup
  • Cottage cheese in cubes ½ cup
  • Baby tomatoes 8 -10
  • Black olives 8-10
  • Onion 1
  • Capsicum 1
  • Cucumber 1
  • Jalapenos 12-15
  • Olive oil 2tsp
  • Salt ¼ tsp
  • Vinegar 1tbsp

 

Method:
1. Melt the butter in pan and add the flour, salt, pepper and paprika powder.
2. Mix well, then add milk and whisk until smooth.
3. Add cheese and cook for about 2-3 minutes.

Cottage cheese salad Method:
1. Mix all the ingredients.
2. Drizzle 2 tsp olive oil, 1/4 tsp salt and 1 tsp vinegar as dressing.

Fajita chicken:

Ingredients:

  • Chicken breast ½ kg
  • Yogurt 4 tbsp
  • Ginger powder 1 tsp
  • Garlic powder 1 tsp
  • Red chili powder 1 tsp
  • Salt ½ tsp
  • Chat masala 1 tsp
  • Garam masala ½ tsp
  • Vinegar 1 tbsp
  • Green olives Garnish
  • Oil as required
  • Capsicum 1
  • Onion 1

 

Greek yogurt :

Ingredients:

  • Yoghurt 1 cup
  • Jalapenos (chopped) 5-6 pieces
  • Salt pinch
  • Dill 1 tbsp
  • Fresh cream 1 tbsp
  • Lemon juice ½ tsp

 

Fajita chicken Method:
Pour some oil on a pan. Add the chicken pieces once the oil heats up.
Add all the ingredients and cook for about 8-10 minutes Add some capsicum and onions. Once done, set it aside to cool down. Garnish with green olives, and serve.

 

Greek yogurt Method:
Mix all the ingredients.

Hyderabadi fish curry:

Ingredients:

  • Fish slices ½ kg
  • Onion 1 blended
  • Coriander powder 2 tsp
  • Chili powder 2 tsp
  • Garlic 2 tsp
  • Salt 1-½ tsp
  • Turmeric ½ tsp
  • Roasted crushed coriander 2 tsp
  • Allspice ½ tsp
  • Yogurt 1 cup
  • Fenugreek seeds ½ tsp
  • Curry leaves 20
  • Oil ½ cup

Ingredients for hyderabadi masala:

  • Desiccated coconut roasted & grinded 1 tbsp
  • Poppy seeds roasted n grinded 1 tsp
  • Sesame seeds roasted n grinded 1 tsp

 

Salsa sauce:

Ingredients:

  • Chopped onion 1
  • Chopped green chili 6-8
  • Chopped tomato 1 large
  • Chopped garlic 1 bunch
  • Crushed chili powder 1 tbsp
  • Brown sugar 1 tbsp
  • Soya sauce 2 tsp
  • Chili sauce 4 tbsp
  • Vinegar 2 tbsp
  • Tomato ketchup ¼ cup
  • Thyme leaves ½ tsp
  • Oregano leaves ½ tsp
  • Salt ½ tsp
  • Pepper ½ tsp

 

Hyderabadi fish curry Method:

Heat oil, add curry leaves and methi dana, add ground onion, fry for 5 mins, when golden add all the spices with yogurt, fry well, add fish with 1 cup water, cover and cook till fish nearly done, lastly add roasted and grinded spices, leave it on dum for 5 mins, serve garnished with chopped coriander leaves, serve with boiled rice.

 

Salsa sauce Method:
1. Pour oil on the pan, add the chopped garlic, and sauté.
2. Add the onions and tomatoes and cook for 3-4 minutes.
3. Add all the remaining ingredients and cook for 15-20 minutes.
