Ingredients:

  • Chicken thighs (pieces) 5-6
  • Ground garlic 1 teaspoon
  • Garlic chopped 4 cloves
  • Ground ginger 1 teaspoon
  • Chopped ginger 2 teaspoons
  • Yogurt 2 tablespoons
  • Lemon juice 1 tablespoon
  • Oil 3 tablespoons
  • Whole milk 1/2 cup
  • Onion sliced 1
  • Tomatoes chopped 2
  • kashmiri red chilli powder 2 teaspoons
  • All spice 1 teaspoon
  • Salt to taste

Method:

Combine yogurt, lemon juice, all spice, kashmiri chili powder and salt in a large bowl to prepare the marinade for chicken tikka. Mix well and add the chicken pieces. Mix well again so that all the chicken pieces get evenly coated with the marinade. Cover the bowl and keep it in the refrigerator for 45 minutes.

Heat oil in a deep non-stick pan. Add the sliced onions and garlic. Sauté for 3-4 minutes (while stirring continuously) or till the onions turn golden brown in colour. Then add the tomatoes, ginger, salt and kashmiri red chili powder. Keep sautéing until the moisture gets evaporated and oil starts oozing on the sides of the masala paste. Add whole milk and continue sautéing until it becomes a thick masala paste. Turn off the heat and let it cool.

Once cooled, transfer the masala paste into a blender along with 1 cup of water and blend it till smooth. Transfer this paste to the same pan, add another cup of water and let it boil. When the water starts boiling, cover the pan, reduce the heat to low and let it simmer for 5 minutes.

Pre-heat the oven to 200oC. Skewer the chicken pieces, place the chicken skewers on a baking tray and brush with oil. Place the baking tray on the top shelf of the oven and cook for 8 minutes. Turn the skewers over, brush with oil and return to the top shelf of the oven for another 7 minutes.
When the chicken skewers are cooked, reheat the sauce and add the chicken tikka. Simmer the chicken tikka in the sauce for 2 minutes.

Serve hot with roti or naan bread

Ingredients:

  • Smoked sausage as required
  • Shrimp 1 packet
  • Olive oil 3 tbsp
  • Wooden skewers as required

 

 

Method:
Cut sausage into about 1” slices, the same thickness as the shrimp.
Use marinates Shrimps.
Tuck the sausage slices in the “C” curve of the shrimp and then thread them onto skewers.
Grill over medium-high heat for about 3 minutes, flip and grill until shrimp are opaque and cooked through. Serve immediately.

  • Eggs 3
  • Orange juice 1
  • Orange zest 1 orange
  • All purpose flour 1-1/3 cup
  • Baking powder ½ tsp
  • Caster sugar ¾ cup
  • Butter 2/3 cup

Method:
Preheat oven at 180 c and grease 10 X 4.5 inch loaf .
In a large bowl beat sugar & eggs together till pale in color &fluffy.
Sift in flour and baking powder and stirring well.
Melt the butter in a saucepan and pour it into the batter.
Juice and the zest of fresh orange and incorporate.
Pour the batter in baking pan and bake for 40 minutes or until tooth pick come s out clean.
Allow the cake completely cool before serve.

Tips:
You can add your own twist to the recipe by adding nuts, chocolate chips and walnuts etc.

  • White fish chunks 250 g
  • Salt to taste
  • Lemon juice 1 lemon
  • Garlic 2 cloves
  • Mustard oil for fry
  • Gram flour 2 tbsp
  • Ginger, grated 3 cm piece
  • Green chilies chopped 2
  • Fresh coriander chopped handful of
  • Black pepper 1 tsp
  • Turmeric powder ½ tsp

Method:
Take a fish put in a bowl and add lemon and salt now put the fish chunks add in double boiler steam for 5 minutes on medium heat.
Now take a pan add gram flour roast on medium heat for a minute and let it cool set aside Now chop the fish in chopper and add grated ginger and garlic in fish add freshly crushed black pepper, coriander leaves and turmeric and mix well.
Now wet your hands for avoiding sticking and make 7 patties.
Serve warm and enjoy.
