Ingredients:

  • Clarified butter ½ cup
  • Onion sliced 1
  • Green gram ½ cup
  • Black gram ½ cup
  • Spinach 1 kg
  • Green chilies 2-3
  • Fenugreek 250 gm
  • Ginger garlic paste 1 tbsp
  • Salt as required
  • Red chili crushed 1 tsp
  • Tamarind pulp ¼ cup

For tempering:

  • Oil ¼ cup
  • Garlic chopped 1 tbsp
  • Red chili whole 6- 8
  • Cumin 1 tsp

Method:
Heat clarified butter cook onion till brown in color. Add ginger garlic paste cook. Add both lentils, spinach, fenugreek and green chilies with water cook for 40 to 45 minute. When lentil is done add salt, red chili and tamarind pulp cook till saag becomes thick. Add all ingredients of tarka in pan to prepare it. Pour on saag and serve with rice.

Ingredients:

  • Rice 500 gm
  • Oil ¼ cup
  • Onion sliced 1
  • Cinnamon 2-3
  • Cloves 6- 8
  • Cumin 1 tbsp
  • Salt as required
  • Water as required

Method:
Heat oil in pan add cinnamon, cumin and cloves fry well. Add onion cook till it color turn to brown. Add water with salt and bring to boil. When boiled come add rice cook till water at rice surface. Turn off flame leave for simmer for 10 to 15 minute.

Ingredients:

  • Milk 1 liter
  • Flour 3 tbsp
  • Wheat 2 tbsp
  • Citric acid as required
  • Sugar 1 cup
  • Whole dried milk 3 -4 tbsp
  • Clarified butter ¼ cup
  • Cardamom powder 1 tsp
  • Walnut chopped 100 gm
  • Brown color few drops
  • cocoa powder as required

Method:
Heat milk add citric acid to separate milk and water. Discard water. In mixing bowl add flour and wheat dissolve with water. Add this mixture in milk and cook for 2 to 3 minute. Add sugar, whole dried milk, cardamom powder, brown color, clarified butter, cocoa powder and walnut cook till it becomes thicken. Remove in dish let it cool. Garnish with almonds and serve.

Ingredients:

  • Gram flour 1 cup
  • Salt as required
  • Red chili powder 1 tsp
  • Cumin 1 tsp
  • Crushed coriander 1 tbsp
  • Carom seeds 1 tsp
  • Soda bi carbonates 1 pinch
  • Onion sliced 1
  • Green chili sliced 2 – 3
  • Seekh kabab 8 – 10
  • Oil for frying

Method:
In mixing bowl add gram flour, onion, all ingredients with water, mix well. Mix seekh kabab small pieces in batter. Heat oil fry pakora on low flame.
