Fish in Honey Ginger Sauce
Ingredients:
Fish fillets 1/2 kg

For Sauce:
Green Onions 5-6
Dark Soya Sauce 1 tbsp
Honey 1 tbsp
Sugar 1 tsp
Chopped Chilies as 3-4
Ginger 2 inch Piece
Water 1 cup

Soya Honey Sauce:
Honey 4 tbsp
Soya Sauce 3 tbsp
Vinegar 2 tbsp
Hoi sin Sauce 2 tbsp
Pure Sesame Oil 2 tbsp
Minced Ginger 2 tbsp
Finely Chopped Red Chilies 1 tbsp

Method:
Prepare marinade by mixing honey, soya sauce,vinegar,hoi sin sauce sesame oil, minced ginger and finely chopped red chilies in a bowl.

Marinate fish for 30 minutes in half the quantity of the prepared sauce. Wok fry the fish 2-3 minutes covered. Add 1 cup water and cook another 30 seconds, taste and adjust.

Clean and cut the onions in 3-inch pieces. Keep the leaves whole. For sauce, mix chopped green onions, dark soya sauce, honey, sugar, chopped chilies, and ginger slices. Add this sauce to fish and let it simmer covered on low heat for 5 minutes till onions are soft.

Add ginger to cold oil, warm it up in a saucepan on minimum heat for 1 minute, enough to release the flavours. Now add the rest of the ingredients, bring to near simmering point and immediately take off heat – total cooking time under 2 minutes as you don’t want to kill the flavors. Cool and bottle. Use as a marinade or a dressing.

For Assembling:
Lay the greens and juices on a platter .Spoon on the fish and the little sauce that will remain and sit down to a super delicious meal!
