Ingredients For Stock

  • Beef steak cut bones of beef or bone marrow 500 gm
  • Carrots 3 to 4
  • Onions 2
  • Celery 2
  • Mushrooms 5 to 6
  • Tomato paste 3 tbsp
  • Cold water 1 pan
  • Garlic 1 bunch
  • Thyme dried or fresh 1tbsp
  • Bay leaves 2
  • Peppercorn or black pepper 1tbsp

For The Soup

  • Onions 6
  • Butter/ beef fat oil 6 to 8 tbsp
  • Worcestershire sauce 2 tbsp
  • Thyme dried or fresh 1 tsp
  • Bay leaves 2
  • Apple cider vinegar 1 tbsp
  • Flour ¼ cup
  • Salt as required
  • Black pepper 1 tbsp

For Topping

  • French bread as required
  • Butter as required
  • Garlic 1-2 cloves
  • Mozzarella cheese ¼ cup
  • Parsley for garnish

Method
For stock prepare a day before or same day
Bake or cook beef with bones strain fatty oil.
Add beef into large pot with cold water. Bring it to boil. Now bake or cook veggies with tomato paste in a same pan/tray. Add veggies to the boiling stock. Add garlic, thyme, bay leaves, peppercorn. Cook it on low to medium heat not strain stock is ready.
For onion soup add butter/fatty oil to the pot on low to medium heat add onion cook on high to med flame then lower it. Caramelise onion now add flour to give it a crisp now deglaze with stock add Worcestershire sauce, thyme, Bay leaves, apple cider/red vinegar. In the end add salt and pepper. Cook it till its little slurry. Toast bread adding butter and garlic. Now in a soup bowl add soup top with bread and cheese bake on 180°c for 5 to 10 min. Garnish with chives, dill or parsley.

Ingredients For Sauce

  • Tomatoes 900 gm
  • Pepper 250 gm
  • Onions 200 gm
  • Carrots 200 gm
  • Celery 100 gm
  • Chilli peppers 60 gm
  • Butter 60 gm
  • Garlic 2 cloves
  • Mixed Herbs 1 tbsp (thyme, basil, parsley, chives)
  • Salt 1 tbsp
  • Sugar 1 tbsp

For Layering

  • Zucchini 3 to 4
  • Eggplant 3 to 4
  • Marrow squash 3 to 4
  • Tomatoes 3 to 4
  • Potatoes 2
  • Onions 3
  • Pepper 2 to 3
  • Olive oil 4 tbsp
  • Salt 2 tsp
  • Thyme dried or fresh 1 tbsp

Method
Put pepper into preheated oven 180°c for 10 to 20min.
Puree the tomatoes. Fry with olive oil onions, celery stalks and carrots add butter and tomato puree and some bay leaves.
Peel the roasted peppers chop and add to the pan add herbs, garlic and chilli peppers. Let it simmer for about 10min up to 60 min.
Slice vegetables and put it into cold water for some time.
Now in sauce add thyme and basil blend it all together.
Spread the sauce on the mould lay out vegetables.
Add olive oil herbs and spices on top of it. Cover with foil and bake on 160°c for 20 to 90min.
Take foil off and bake for another 10 to 20 min.
Serve hot with parsley cheese or any of your favourite topping.
