  • Potatoes (peeled and cubed) 6
  • Salt 1 1/2 tsp
  • Turmeric powder 1 tsp
  • Oil 3 tbsp
  • Black mustard seeds 2 tsp
  • Curry powder 1 tsp
  • All spice powder 1 tsp
  • Parsley leaves 1 tbsp


Boil the potatoes with 1 teaspoon salt, turmeric and enough water to cover. Strain the potatoes once done. Add the oil, mustard seeds, curry powder, all spice powder and remaining salt to the bowl and toss with potatoes. transfer the potatoes to a foil-lined baking sheet and roast in the pre-heated oven at 180 degrees c for 30 to 40 minutes, flipping the potatoes once half-way through. Serve hot garnished with parsley, on top of large puris.


  • Flour 3 cups
  • Baking soda 2 tsp
  • Baking powder 1/2 tsp
  • Rosemary 2 tsp
  • Eggs 2
  • Unsalted butter (melted) 1/2 cup
  • Olive oil 1/4 cup
  • Salt 1/2 tsp
  • Sugar 1 1/4 cups
  • Lemon zest 1 tbsp
  • Zucchini (grated) 3 cups


Mix together the flour, baking soda, baking powder, salt and rosemary. Beat the eggs, add in the sugar. Beat in the melted butter and olive oil. Stir in the lemon zest and grated zucchini. Add the dry ingredients to the wet, a little at a time. Divide batter into two greased and lined loaf pans. Bake at 180 degrees c for 45-50 minutes. A skewer inserted into the center should come out clean. Remove from the oven. Let cool for a few minutes and then remove the loaves from their pans to cool on a rack.
