Sesame Masala Puri Recipe | Food Diaries | Chef Zarnak Sidhwa

  • Chickpea flour ¾ cup
  • Wheat flour 1 cup
  • Ginger paste 1 tsp
  • Green chili paste 1 tsp
  • All spice powder ½ tsp
  • Red chili powder ½ tsp
  • Turmeric powder ¼ tsp
  • Carom seeds ¼ tsp
  • White sesame seeds 2 tsp
  • Oil 1 tsp
  • Lemon juice 1 tsp
  • Oil for deep frying
  • Salt to taste

To all the dry ingredients add the wet ingredients. Add water till you get smooth dough. Bind well and let it rest for 15 minutes. Roll into a log and cut out 12 to 15 balls. Roll each into a circular disc. Heat the oil. Slip in the Discs and Fry on both the sides. Enjoy these Puri with Ginger Tea, Pickle or with aloo.


  • Rice 2 cups
  • Chopped tomatoes 3
  • Cubed potatoes 2
  • Chopped onion 1
  • Peas ¼ cup
  • Chopped carrot 1
  • Cauliflower 2-3 florets
  • Butter 3 tbsp
  • Oil 1 tsp
  • Ginger paste 1 tsp
  • Minced garlic 1 tsp
  • Chopped green chili 1
  • Turmeric ¼ tsp
  • Cayenne pepper powder ¼ tsp
  • Pav bhaji masala 2 tsp
  • lemon juice ¼ tsp
  • Salt to taste
  • Raita to serve
  • Green coriander for garnish

Cook the peas, cauliflower, potatoes and carrots with little salt till done.
Mash them. On a Tawa, add butter and oil. Once it melts, add onions, tomatoes and cover with a lid. Cook for 4 to 5 minutes. Add ginger paste, green chilies, garlic.
Add turmeric and salt, pav bhaji masala, mashed veggies, water, cayenne pepper powder. Add Rice, lemon juice and cook till done. Sprinkle coriander leaves.
Serve with Raita.
