Ingredients for daal:

  • Split Bengal gram 250 gm
  • Onion chopped 1 small
  • Green chilies 4-5
  • Cumin seeds 1 tsp
  • Curry leaves 8-10
  • Water 3 cups
  • Turmeric ½ tsp
  • Salt 1-½ tsp
  • Oil ¼ cup
  • Asafoetida pinch
  • Tomatoes 1-2

Ingredients for pakwan:

  • Flour 2 cups
  • Cumin seeds ½ tsp
  • Clarified butter 3 tbsp
  • Salt ½ tsp
  • Chili powder ½ tsp
  • Water to make dough
  • Oil for frying

Other ingredients:

  • Aamchur powder ½ tsp
  • Chili powder ½ tsp
  • Tamarind chatni 2 tbsp
  • Chopped onion 2 tbsp
  • coriander leaves 2 tbsp

Method for daal:

Soak daal for 1 hour.heat cooker with ¼ cup oil, add heing, chopped onion and fry for 2 mins, add chopperized tomatoes, chopped green chilies and fry well, add daal, turmeric and salt, add 2 cups water, close the lid of cooker, cook till daal is soft but not mushy. Heat 2 tbsp oil in another pan and prepare a baghar, add cumin seeds 1 tsp, curry leaves, add the baghar to the daal, cook for few more mins, when serving, sprinkle aamchur powder ½ tsp, chili powder ½ tsp, coriander leaves 2 tbsp, imli ki chatni 2 tbsp and chopped onion 2 tbsp, serve hot with crisp pakwan.

 

Method for pakwan:

Sieve flour, add in cumin seeds, ghee, salt, knead into a medium dough with water, keep the dough for 30 mins, divide the dough into 12 portions, roll out each portion like a chapati, prick the surface with a fork, heat oil, slide in the pakwan and fry it on medium flame till it turns crisp and golden in color, serve with hot daal.

Ingredients:

  • Boneless Chicken 250gm
  • Boil sela rice ½ kg
  • Salt ½ tsp
  • Sugar ½ kg
  • Clarified butter ½ cup heaped
  • Butter 1 tbsp
  • Whole dried milk 250 gm
  • Green cardamom 8
  • Almonds 2 tbsp
  • Yogurt 1 tbsp
  • Petha finely chopped 4 tbsp
  • kewra water as req

Method:

Soak sela rice for 2 hours then boil until done .heat ghee in a pan, add butter, cardamom, , fry well, add ½ cup water with salt, and cook until done. When done add sugar, yogurt and 1 cup water, when sugar dissolves syrup starts to get little thick, add in the completely boiled rice, mix well, leave it on dum for 20 mins. lastly add kewra water, khoya and petha, leave it for 5 mins, mix and serve.

Ingredients:

  • Mutton 750 gm
  • Split Bengal gram (chanay ki daal) 1 cup
  • Red lentil (masoor) soaked ¼ cup
  • Pigeon peas soaked ½ cup
  • Turmeric ½ tsp
  • Salt 2 tsp
  • Bottle gourd 250 gm
  • Oil ¼ cup
  • Cumin seeds 1 tbsp
  • star anise 2
  • Cinnamon 1 stick
  • Cloves 4
  • Onion 2
  • Green chili paste grinded 2 tbsp
  • Ginger garlic 2 tbsp
  • Coriander powder 1 tbsp
  • Tomatoes chopped 3
  • Dry mango 4
  • Coriander leaves chopped ½ cup
  • Mint leaves chopped ½ tsp
  • Allspice 1 tsp

Ingredients to temper:

  • Clarified butter ¼ cup
  • Fresh chopped garlic 1 tbsp heaped
  • Red chilies dried long ones 4
  • Chili powder 1 tsp

Method:
Soak all the daals for 3 hours, pressure cook daals with ½ tsp turmeric, salt 1 tsp on low flame till daal tender, now blend your daal and keep aside. In a pan heat ¼ cup oil, add in 1 tbsp cumin seeds and lauki cut in big pcs, cook with ½ cup water covered for 15 mins till lauki is ¾ done. Remove and keep aside.

Method for mutton:

Heat ¾ cup oil in a pressure cooker, add sliced onion, fry till light golden, add in mutton, cook for 5 mins, now add in grinded green chili paste, ginger garlic paste, fry well, add all the dry spices with chopperised tomatoes, cook till oil comes on top, add 2 cups water, cover and cook till mutton done. Now in a pan add blended daal, cooked lauki, cooked mutton, mix all well, put to cook on fire with dry mango pcs, add chopped mint and coriander, allspice powder, cover and cook for 5 mins, lastly give baghar.
