Ingredients:

  • Mutton trotters 4
  • Skull 1
  • Yogurt 1 cup
  • Red chili powder 2 tbsp
  • Coriander powder 1tbsp
  • Turmeric powder 1tsp
  • Cumin powder 1tsp
  • Ginger garlic paste 1tbsp
  • All spice powder 1tbsp
  • Cloves 5-6
  • Bay leaves 1-2
  • Green cardamom 4-5
  • Onions 2
  • Oil 1 cup
  • Salt to taste
  • Green chilies for garnish
  • Fresh coriander for garnish
  • Lemon for garnish
  • Whole ginger for garnish
  • All spice powder for garnish

Method:
In a pot put the skull and & trotters and add half of Ginger Garlic paste. Onion and cook for 4-5 hours then separate the stock. Take another pan, pour 1 cup oil to heat, add 1-2 bay leaves, 5-6 cloves and 4-5 green cardamoms roast it. Now add remaining ginger garlic paste, yogurt, coriander powder, all spice powder, red chili powder, turmeric powder and salt to taste splash of water and roast it.
When masala is ready add the skull and trotters to it and cook on low flame then add stock and for bhagar add two onions and fry it. In the end add green chilies, ginger, fresh coriander and lemon. Serve hot.

  • Cumin seeds 1 tsp
  • Mustard seeds 1/2 tsp
  • Red chilies (whole) 3-4
  • Whole peppercorns 5-6
  • Onion (minced) 1 cup
  • Tomatoes (diced) 1 cup
  • Ginger garlic (minced) 1 tbsp
  • Ground cardamom 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Paprika 1 tsp
  • Fenugreek 1 tsp
  • Cauliflower 1 cup
  • Carrots (diced) 1 cup
  • Potatoes (diced) 1 cup
  • Vinegar 4tabs
  • Salt to taste
  • Water 1/2 cup
  • Peas 1 cup
  • Lemon juice ass required
  • Fresh coriander to serve
  • Rice to serve

Method:
Blend all the spices together with tomatoes.
Heat a heavy bottom pot, once hot, add onions and Sauté until slightly golden then add all spices paste along with vegetables Once vegetables have cooked, and become softened, about 20-10 mins, stir in fenugreek, and lemon juice. Stir to mix. Bowl of Winter Vegetable Vindaloo. Serve over rice.
