Ingredients:

  • Lady finger ½ kg thinly sliced (1 lady cut into 4 strips)
  • Gram flour 4 tbsp
  • Black fennel ½ tsp
  • Ginger garlic paste 1 tsp
  • Salt ½ tsp
  • Turmeric ½ tsp
  • Crushed red pepper 1 tsp
  • Fennel grinded 1 tsp
  • Onion 1 cut into rings and halves
  • Capsicum 1 cut into rings and halves
  • Tomato 1 cut into rings remove seeds and cut into halves
  • Tamarind pulp 1 tbsp heaped
  • Chat masala ½ tsp
  • Coriander leaves 2-3 tbsp
  • Green chilies 2-3 julienne
  • Sizzler to serve
  • Crushed red pepper 1 tsp

 

METHOD:

In a bowl put basin, saunf, kalonji, ginger garlic paste, salt, haldi, chili powder and mxi with 2 tbsp water, add your sliced bhindi in this and deep fry till crisp, remove in a strainer.

METHOD FOR MASALA:

Heat 3 tbsp oil in a wok, add salt, turmeric, chili powder(all ½ tsp each), add in crushed red pepper with veggies, fry on full flame for just 2-3 mins, add tamarind pulp, green chilies, and add in the fried bhindi, toss well, sprinkle with chat masala, serve on a hot sizzler.

Ingredients:

  • Clarified butter ½ cup
  • Chickpeas 2 cups soaked and boiled with salt & turmeric ½ tsp each
  • Chopped onion 1 cup
  • Tomatoes 3 boiled and chopperised
  • White cumin seeds 1 tsp
  • Ginger garlic 1 tbsp
  • Chili powder 1 ½ tsp heaped
  • Salt 1 tsp leveled
  • Turmeric ½ tsp
  • Allspice ½ tsp
  • Ginger julienne 1 tbsp
  • Green chilies 3 chopped
  • Coriander leaves 4 tbsp
  • Water 1 cup
  • Fenugreek leaves ½ tsp

 

METHOD:

Heat clarified butter in a wok, add in chopped onion, fry till slightly light golden, add in boiled and chopperized tomatoes, ginger garlic, dry seasonings, fry well till oil comes on top, add allspice, fenugreek leaves, add in the boiled lentil with 1 cup water, cover and cook on low flame till fully done, remove, serve garnished with greens and ginger julienne.

  • Clarified butter ½ cup
  • Chicken boneless ½ kg cut into small cubes
  • Chopped onion 1 cup
  • Button red chilies 8
  • Ginger chopped 1 tbsp
  • Garlic chopped 1 tbsp
  • Coriander leaves chopped 3 tbsp
  • Green chilies julienne 4
  • Turmeric ¼ tsp
  • Chili powder 1 ½ tsp
  • Allspice 1tsp
  • Coriander powder 1tsp
  • Salt 1 tsp
  • Roasted & crushed cumin 1 tsp
  • Yogurt ¾ cup

 

METHOD:

Heat ghee, fry chopped onion with chopped ginger garlic, add button red chilies with dry seasonings, fry well adding ½ cup water, then add yogurt, fry well, cover and cook till done, lastly add allspice and chopped greens, serve with nan.
