Spanish cold potato salad:
1 cup potatoes (boiled and cubed)
1/2 cup carrot ( boiled and cubed)
1/4 cup green peas (boiled)
1 tbsp lemon juice
1/2 cup mayonnaise
1/4 tsp salt
1/2 tsp black pepper crushed
2 hard boiled eggs ( garnish )
2 tbsp raisins
Method:
In a bowl mix mayonnaise with lemon juice, salt and black pepper, now add vegetables and raisins, mix well.
Garnish with boiled eggs and serve chilled.
