  • Flour 2 cups
  • Baking powder 1 tsp
  • Salt 1/2 tsp
  • Unsalted butter 3/4 cup
  • Sugar 3/4 cup
  • Honey 3 tbsp
  • Tahini 3/4 cup
  • Toasted sesame seeds 1/4 cup

Mix flour, baking powder and salt beat butter, sugar and honey until light. Beat in tahini, then add dry ingredients in 2 batches, beating after each addition until fully combined. Dough will be slightly sticky. Place sesame seeds in a small bowl. Scoop out heaping tablespoons of dough and roll into balls. Dip tops of balls in sesame seeds, pressing to adhere, and place, sesame side up, on lined baking sheets, spacing about 2″ apart. Bake cookies at 180 degrees c, rotating baking sheets halfway through, until golden brown, 13–15 minutes. Let cool on baking sheets (cookies will firm as they cool.

  • Green cardamoms 5
  • cumin seeds 2 tsp
  • Cloves 2
  • onions, chopped 3
  • garlic, chopped 1 tbsp
  • ginger, chopped 1 tbsp
  • butter 2 tbsp
  • green chilli chopped 1
  • capsicum, chopped 1
  • turmeric 1 1/2 tsp
  • red chilli powder 1 tsp
  • cumin powder 2 tsp
  • coriander powder 2 tsp
  • Salt to taste
  • mutton minced 1/2 kg
  • milk 2 tbsp
  • tomatoes, pureed 3
  • sugar 1-2 tsp
  • Lemon juiced 1
  • coriander leaves, chopped 3 tbsp
  • Pav to serve

Heat oil, add bay leaf, green cardamom, cumin and cloves. Now add chopped onions. Sauté till golden brown. Remove the bay leaf. Add garlic, ginger and butter. Add the green chilies and capsicum. Now add turmeric powder, red chili powder, cumin powder, coriander powder and salt. Add the mutton mince. Saute for few minutes. Add milk and tomato puree, sugar and lemon juice. Cook for few minutes. Add water, cover and cook till the water evaporates and the mutton is well done. Garnish with chopped coriander leaves, split green chili and a blob of butter. Serve with pav.
