This TThai Green Chicken Curry recipe is easy and delicious and perfect for a quick lunch /dinner.

Ingredients:

  • Chicken Breast Fillets (strips) 300 gm
  • Oil 1/4 cup
  • Onion (wedges) 1
  • Thai Green Curry Paste ½ cup
  • Coconut milk 1 cup
  • Chicken stock 1 cup
  • Capsicum (sliced) 1
  • Coriander leaves 1/2 bunch
  • Fish sauce 1 tbsp
  • Brown sugar 1 tbsp
  • Lemons (wedges) 2
  • Boiled potato (wedges) 1
  • Green beans (boiled) 100gm
  • Basil leaves as required

 

For Thai Green Curry Paste:

  • Green chilies 4-6 medium
  • Shallots (chopped) 2
  • Grated ginger 2 inch piece
  • Crushed garlic 2 cloves
  • Fresh coriander small bunch
  • Lemongrass stalks (chopped) 2
  • Lemon juice & zest of 1 lemon
  • Crushed coriander seeds 1 tbsp
  • Ground cumin 1 tsp
  • Crushed black peppercorns 1 tsp
  • Soy sauce 2 tsp
  • Olive oil 3 tbsp

Method:

Blend Thai green curry paste ingredients. Heat oil and saute onion in it. Then add green curry paste and cook. Now add chicken, green beans, potato, chicken stock, coconut milk and cook. Then add capsicum, lemon, coriander, fish sauce, brown sugar and cook. Add basil leaves and serve.

Ingredients:

  • Eggs 2
  • Milk ½ cup
  • Cinnamon 1 tsp
  • Sugar 1tbsp
  • Sandwich bread 1 loaf
  • For Cinnamon Sugar:
  • Sugar 4 tbsp
  • Cinnamon 1 tsp
  • Clarified butter for frying
  • For Filling:
  • Whipped cream 1/2 cup
  • Any sliced fruit as required
  • For Topping:
  • Whipped cream as required
  • Any sliced fruit as required

Method:

Mix eggs, milk, sugar and cinnamon. Cut bread loaf in bowl shape and dip in milk mixture and fry them. Roll hot loaf in cinnamon sugar. Fill with fruit and whipped cream. Garnish with whipped cream and serve.
