Vegetable Biryani tastes like no other because of it’s special blend of spices that makes it taste irresistible.

  • Clarified butter 3 tbsp
  • Oil 1 tbsp
  • Rice (boiled) 2 cups
  • Saffron a pinch
  • Milk 2 tbsp
  • Fried onions as required
  • Biryani masala ¼ cup
  • Coriander leaves few
  • Mint leaves few

To Marinate The Vegetables:

  • Curd 1/2 cup
  • Turmeric powder 1/4 tsp
  • Red chili powder 2 tsp
  • Coriander powder 1 tsp
  • Biryani masala 1tsp
  • Salt 1tsp
  • Ginger garlic paste 1 tbsp
  • Onion (sliced) 2
  • Green chili (chopped) 1
  • Tomatoes (chopped) 2
  • Carrot (chopped) 1
  • Beans (chopped) a few
  • Potato (cubed) 1
  • Cauliflower florets 1 cup
  • Green peas 1/4 cup
  • Fried onions ½ cup
  • Coriander leaves (chopped) as required
  • Mint leaves (chopped) as required


Mix curd, salt, ginger garlic paste and spice powders required for the marinade.
Heat a pan with clarified butter and oil; add the marinated vegetables and sauté for few minutes. Cook till the moisture evaporates completely. Take half of the cooked vegetables and keep aside.
Layer the cooked rice on a layer of the cooked vegetables. Add the remaining vegetables masala and the remaining rice over it. Finally add fried onions, mint, coriander, saffron milk and biryani masala sprinkled on top. Seal the pan and leave it on simmer for few minutes.


  • Yogurt 2 cups
  • Salt 1/2 tsp
  • Cumin powder 1 tsp
  • Green chili (chopped) 1
  • Red chili powder 1/2 tsp
  • Onion (chopped) 1
  • Cucumbers (chopped) 2
  • Tomato (chopped) 1
  • Green capsicum (finely chopped) 1
  • Coriander (finely chopped) 1/2 cup


Whisk together yogurt, salt, cumin powder, green chili and red chili powder. Add all the vegetables and mix well. Refrigerate for half an hour before serving.


  • Corn flour 4 tbsp
  • Milk 475 ml
  • Cocoa powder 1 tbsp
  • Caster sugar 1/4 cup
  • Whipped cream for decoration
  • Chocolate (grated) to sprinkle


Blend corn flour and cocoa powder with 1/4 cup of milk. Heat remaining milk to boiling point, add sugar, stir to dissolve. Pour in blended corn flour, stirring quickly. Return to saucepan, cook, stirring, until mixture boils and thickens. Pour quickly into a dish, cool, then refrigerate. Decorate with whipped cream and grated chocolate.
