Ingredients:

  • Mutton ½ kg
  • Potatoes 250 gm
  • Oil ½ cup
  • Black pepper 1 tsp
  • Coriander powder 1 ½ tsp
  • Salt 1 ½ tsp
  • Onion 1 large sliced
  • Yogurt 1 cup
  • Ginger garlic (grinded) 2 tbsp
  • Ginger (julienne) 1 tbsp
  • Green chilies 6-8
  • Fresh coriander 2 tbsp

 

METHOD:

Heat oil, add onion, fry till light golden, remove. In the same oil, add ginger garlic paste with mutton, fry well for 10 mins, add black pepper, coriander, yogurt, salt and green chilies with ½ cup water, cover and cook till mutton half done, add to it coarsely grounded brown onion with small cubes of potatoes, now add 1 ½ cup water, cover and cook till potatoes and onion tender, leave it on dum till oil comes on top, remove on a serving dish, garnish with chopped coriander, green chilies, ginger julienne and serve.

Ingredients:

  • Brinjal (cut into big cubes) 1
  • Chickpeas (boiled) 2 cups
  • Rice (soaked) 2 cups
  • Oil ½ cup
  • Onion 2 (cut into cubes)
  • Capsicum (julienne ) 1
  • Garlic (grinded) 1 tsp heaped
  • Red chili powder 2 tsp
  • Tomatoes (chopped) 4
  • French beans 1 cup (cut into pieces)
  • Salt 2 tsp
  • All spice ½ tsp
  • Cumin (roasted & crushed) 1 tsp
  • Butter 2 oz

METHOD:

Soak chickpeas overnight and boil until done. Par boil French beans. Pan fry brinjals. Heat oil and butter fry onion, capsicum for 2-3 mins, add chili powder, salt, soaked rice, tomatoes, add water and cook till rice done. Now add in it the veggies, boiled chickpeas, cook until done, serve.

Ingredients:

  • Chicken mince ½ kg
  • Spinach (finely chopped) 250 gm
  • Onion (chopped) 1 ½ cup
  • Tomatoes (chopped) 3
  • Chili powder 3 tsp
  • Coriander powder 2 tsp
  • Ginger garlic 1 tsp
  • Salt 1 ½ tsp
  • Ginger thinly sliced 1 tbsp
  • Mint chopped 2 tbsp
  • Green chilies 4 cut into halves
  • Oil ½ cup
  • Turmeric ½ tsp
  • Allspice ½ tsp
  • Butter 2 oz

 

METHOD:

Heat oil and butter fry onions till light golden, add dry seasonings with chopped tomatoes and mince, fry well, add ½ cup water, cover and cook till mince and tomatoes tender, add finely chopped spinach, cook for another 10 mins, when oil comes on top, garnish with ginger julienne and mint leaves, serve with roti.
