Ingredients:

  • Mutton diced 1 kg
  • Oil 2 tbsp
  • Cumin seeds, toasted and crushed 2 tsp
  • Coriander seeds, toasted and crushed 2 tsp
  • Onions sliced 2
  • Ginger-garlic paste 3 tbsp
  • Tomatoes, blanched and chopped 8
  • Yoghurt 250ml
  • Ground black pepper 1–2 tsp
  • Salt to taste
  • Ground allspice 1 tsp
  • Turmeric powder 1 tsp
  • Lemon juice 1 lemon
  • Tomato puree 4 tbsp
  • Green chilies, chopped 2
  • Coriander leaves, chopped ½ bunch

 

Method:
Heat oil and add whole spices, sliced onions and a pinch of salt. Cook the onions until brown and soft. Add the ginger-garlic paste and the meat and sauté till it is sealed on all sides. Add all the powdered spices and cook for 5 minutes. Add the tomatoes, heat through and then add the yoghurt, lemon juice, tomato puree and chilies. Cook till mutton is done and then add the coriander leaves and serve.

Ingredients:

  • Undercut beef ½ kg (strips)
  • Corn flour 1/4 cup
  • Oil 1/4 cup
  • Ginger, minced 2 tsp
  • Garlic, minced 1 tbsp
  • Soy sauce 1/3 cup
  • Water 1/3 cup
  • Dark brown sugar 1/2 cup
  • Spring onions 4

Method:
Toss the undercut strips with the corn flour. Heat oil. Add the strips, shaking off any excess corn flour to the pan in a single layer and cook on each side for 1 minute. Remove from pan and add the ginger and garlic and sauté, add the soy sauce, water and dark brown sugar to the pan and let it come to a boil. Add the steak strips back in and let the sauce thicken. Add the green onions, stir to combine and serve.
