  • Beef undercut ½ kg
  • Salt 1 tsp
  • Ginger garlic paste 1 tbsp
  • Schezwan sauce 2 tbsp heaped
  • Chili powder 1 tsp
  • Red color pinch
  • Salt ½ tsp
  • Lemon juice 2 tbsp
  • Chili sauce 2 tbsp
  • Black pepper ½ tsp heaped
  • Egg 1
  • Flour 3 tbsp
  • Corn flour 2 tbsp
  • Chat masala to sprinkle as required







Boil undercut with ½ tsp salt, 1 tsp ginger garlic paste and ½ cup of water till tender, keep aside. Now marinate the cooked undercut with ginger garlic paste, schezwan sauce, chili powder, color, salt, chili sauce, black pepper, egg, mix well, keep it for 30 mins, then add in it 3 tbsp flour and corn flour, mix all together, deep fry till golden, remove in a plate, sprinkle with chat masala, serve with any chutney.


  • Boiled rice ½ kg
  • Mutton 750 gm
  • Onion 1 ½ cup
  • Yogurt 1 cup
  • Green chilies 12
  • Cashew nuts 15
  • Melon seeds 2 tbsp
  • Sesame seeds 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Black pepper 1 tsp
  • Salt 1 ½ tsp
  • Oil ¾ cup
  • Mixed whole spices 1 tbsp
  • Potatoes fried 3
  • Mayonnaise 4 tbsp
  • Cream 4 tbsp
  • Cream cheese 3 tbsp
  • Coal to simmer
  • Coriander chopped 2 tbsp
  • Clarified butter ¼ cup


Blend together onions, yogurt, green chilies, cashew nuts, melon seeds, sesame seeds, ginger garlic, black pepper, and salt. Heat oil in a pressure cooker, put whole spices, add mutton fry for 10 mins, add the prepared grinded paste, fry for 5 mins, add 1 ½ cup of water, cover and cook till done, mix together mayonnaise, cream, cheese cubes, and add this mixture to gravy, cook for 2 mins, give dum of coal.

To assemble:
In a big pan put ¼ cup oil, ¼ cup water, thin layer of boiled rice, then mutton gravy, then the leftover rice, sprinkle some chopped coriander on top and few tbsp of ghee, put on dum, serve hot with kachoomber.


  • Prawns cleaned ½ kg
  • Oil ¼ cup
  • Clarified butter 2 tbsp
  • Black cumin seeds 1 tsp
  • Garlic chopped 10 to 12 cloves
  • Onions chopped 2 medium
  • Tomato sauce 2 tbsp
  • Vinegar 1 tsp
  • Cumin powder 2 tsp
  • Coriander powder 2 tsp
  • Kashmiri red chili paste 4 tbsp
  • Chopped coriander 4 tbsp
  • Salt to taste
  • Parathas to serve



Heat oil and clarified butter. Add black cumin seeds and sauté for a minute. Add garlic and onion and cook till onion turns light golden, add red chili paste, coriander powder, cumin powder and little water, sauté till oil separates. Add prawns and salt and mix well. Cover & cook for 5 to 6 minutes and add little water if needed, add tomato sauce, vinegar and coriander mix well, cook for a minute and serve hot with paratha.
