Ingredients:

  • Soya sauce ¼ cup
  • Rice vinegar 1 tbsp
  • Brown sugar 1 tbsp
  • Oyster sauce 2 tbsp
  • Sesame oil 1 tsp
  • Oil 3 tbsp
  • Chicken breast fillets, cubed ½ kg
  • Salt to taste
  • Chopped garlic 1 tbsp
  • Chopped ginger 1 tbsp
  • Capsicum, chopped 1
  • Chicken broth 1/4 cup
  • Corn flour 2 tbsp
  • Cashews 1 cup
  • Green onions, thinly sliced 2
  • Rice or noodles to serve

 

Method:

In a bowl, mix together the soya sauce, vinegar, brown sugar, oyster sauce, and sesame oil. Set aside. Heat the oil and add the chicken cubes. Sprinkle salt and let the chicken brown. Add in the garlic and ginger and then the capsicum. Add in the stock. Pour in the sauce mixture, then mix the corn flour with 1/4 cup water to make a slurry and pour it in. Stir the sauce to thicken, then add the cashews and stir to coat everything with the sauce, adding a splash of water if the sauce is too thick. Finally, sprinkle on the green onions. Serve with cooked rice or noodles.

Ingredients:

For the sponge:

  • Pitted dates, chopped 200gm
  • Boiling water 200ml
  • Bicarbonate of soda 1 tsp
  • Unsalted butter 75gm
  • Black treacle 2 tbsp
  • Dark brown sugar 50gm
  • Eggs 2
  • Flour 150gm
  • Baking powder 2 tsp

For the sauce:

  • Unsalted butter 150gm
  • Dark brown sugar 300gm
  • Black treacle 1 tbsp
  • Cream 200ml

Method:
Put the chopped dates, boiling water and bicarbonate of soda into a bowl, stir and then leave for 10 minutes. Beat the butter and black treacle together, then add the sugar and mix again. Beat in the eggs. Add the flour and baking powder until you have a smooth, thick batter. Using a fork, stir the soaked dates, then pour the dates and their liquid into the batter and beat gently to mix in. Pour into the dish or cake tin and bake at 180 degrees c for 30–35 minutes, or until a cake tester comes out clean.
Meanwhile, to make the sauce, melt the butter, brown sugar and treacle over a very low heat. Once the butter’s melted, add in the cream. As soon as it’s out of the oven, prick the pudding all over with a cocktail stick and pour about a quarter of the warm sauce over. Serve pudding with the rest of the sauce in a jug, and cream to serve.
