Lucknowi Kabab Handi Recipe

Ingredients

K&N’s Kabab Tikki – 28-30 kababs
Ghee – 3 tbsp
Onions – 1 cup; finely chopped
Ginger garlic paste – 1 tbsp
Tomato puree – 1 cup
Coriander powder – 1 tsp
Turmeric powder – ½ tsp
Cumin powder – 1 tsp
Red chilli powder – 1 tsp
Whole spice mix – 1 tsp
Salt – 1 tsp / to taste
Yogurt – 1 cup
Cream – ½ cup
Dried fenugreek – 1 tsp
Cardamom powder – ½ tsp
Roasted cashew nut paste – ¼ cup
Hot water – ¼ cup
Degi mirch powder – 1 tsp
Oil – for frying
Coriander – for garnishing; chopped
Method
Fry K&N’s Kabab Tikki as per instructions on pack.

Melt ghee in a deep saucepan; add onions and sauté until translucent.

Add ginger-garlic paste to the pan and cook for a few seconds. Pour tomato puree and cook for 2-3 minutes.

Add coriander powder, turmeric powder, cumin powder, red chilli powder, whole spice mix, and salt. Mix well.

Add yogurt and cook until ghee separates. Add cream, dried fenugreek, cardamom powder, roasted cashew nut paste and cook for 2-3 minutes. Add hot water and degi mirch powder; cook for another minute. Add Kabab Tikki to the prepared curry and mix well.

Garnish with freshly chopped coriander leaves and serve. Lucknowi Kabab Handi is ready.
