Ingredients:

  • Butter 170 gm
  • Caster sugar 170 gm
  • Eggs 3
  • Coffee 3 tsp
  • Boiling water 1 tsp
  • Flour 200 gm
  • Baking powder 1 tsp

For Coffee Butter Cream:

  • Icing sugar 200 gm
  • Butter 90 gm
  • Coffee 3 tsp
  • Boiling water 1 tsp
  • Chocolate (grated) 1 oz

 

Method:
Mix the coffee with water and leave to cool. Beat the butter and sugar. Add the eggs one at a time. Pour in the cooled coffee, baking powder and flour and stir until smooth. Pour into a greased and lined tin and bake at 180 degrees C for 50-60 minutes, until done. Leave to cool on a wire rack.

For the butter cream, mix the coffee with water and leave to cool. Beat the butter and icing sugar before pouring in the cooled coffee. Mix until smooth. Use a palette knife to spread the butter cream onto the top of the cake. Grate the chocolate on top.

(Spicy Baked Potato Appetizer)

Ingredients:

  • Baby potatoes (boiled and peeled) ½ kg
  • Yogurt 1/2 cup
  • Onion (finely chopped) 1
  • Tomato puree 1/4 cup
  • Ginger paste 1 tbsp
  • Garlic paste 1 1/2 tbsp
  • Paprika 1 tsp
  • Red chili powder 1 tsp
  • Turmeric 1/2 tsp
  • Coriander powder 1 1/2 tsp
  • All spice powder 1 tsp
  • Dry fenugreek leaves (crushed) 2 tsp
  • Salt 2 tsp
  • Coriander leaves to garnish

To Make The Sauce:

  • Mayonnaise 1/4 cup
  • Sour cream 2 tbsp
  • Lemon juice 1/2 tsp
  • Red chili flakes 1/2 tsp
  • Salt to taste

 

 

Method:
Boil the baby potatoes and once cooled, peel them and rub with salt and turmeric and set aside for 10 minutes. Next mix all the ingredients together in a bowl and then add the potatoes to the mix. Place in refrigerator for 3 hours. Spread the marinated potatoes evenly on a baking tray and bake at 180 degrees C for 35 -40 minutes tossing it every 15 minutes. Cook evenly till crisp. Garnish with chopped coriander and some sea salt. Mix the sauce ingredients together. Serve the potatoes with the sauce.

Ingredients:

  • Pineapple, trimmed, peeled and chopped 150 gm
  • Banana, peeled and sliced 1 small
  • Cold water 50 ml
  • Lemon juice 1
  • Husk 2 tbsp
  • Ice as required

 

Method:
Blitz the pineapple in a blender with the banana, lemon juice, husk, ice and cold water until smooth. Pour the smoothie in tall glasses and serve immediately.
