Ingredients:

  • Milk 1⁄2 liter
  • Milk 1⁄4 cup
  • Custard powder 3 tbsp
  • Caster sugar 4 tbsp
  • Dates (pitted) 15
  • Water 1 cup
  • Brown sugar 1⁄4 cup
  • Butter 1⁄4 cup
  • Cream 1⁄2 cup
  • Rusk 8-10

For Coffee Syrup:

  • Hot water 1 cup
  • Coffee powder 4 tsp

For Garnish:

  • Pistachios to serve

 

Method:
Boil ½ liter milk. Mix the custard powder and 1⁄4 cup milk. Now add this mixture to the boiling milk. Mix well, bring to boil again and let it cook until the custard is thick. Once thickened add the sugar and take off the heat and transfer into a bowl. Cover it with cling wrap directly on the surface so it does not form a skin. Refrigerate it for 30 minutes. In a saucepan, cook the dates with water until the mixture is thick and paste like. Add the brown sugar stir well. To the caramel, add butter and add the cream and cook until the caramel is thick. Strain the caramel and separate the date skins.
For the coffee syrup, mix warm water with the coffee. Let it cool completely.
To assemble, take the rusks and soak it in the coffee syrup. Lay it flat in a serving dish. Top this with the cooled custard and spread evenly. To top add the date caramel to a piping bag with a star tip nozzle. Pipe the date caramel on top of the custard. Garnish with pistachios and serve.

  • Oil 2 tbsp
  • Peanuts 2 tbsp
  • Mustard 1 tsp
  • Split Black gram 1 tsp
  • Split Bengal gram 1 tsp
  • Curry leaves few
  • Dried red chili 1
  • Ginger (chopped) 1 inch
  • Green chilies (chopped) 2
  • Turmeric ¼ tsp
  • Cooked rice 2 cups
  • Salt ½ tsp
  • Coriander (chopped) 2 tbsp
  • Lemon juice 2 tbsp

For Zeera Rice:

  • Clarified butter 2 tbsp
  • Cumin 1 tbsp
  • Dried red chili 1
  • Cooked rice 2 cups
  • Salt ½ tsp
  • Coriander (chopped) 2 tbsp

For Tomato Rice:

  • Clarified butter 2 tbsp
  • Bay leaf 1
  • Cloves 3
  • Green cardamoms 2
  • Cinnamon 1 inch
  • Cumin 1 tsp
  • Cashews 10
  • Onion (chopped) 1
  • Ginger garlic paste ½ tsp
  • Tomato (chopped) 1
  • Coriander (chopped) 2 tbsp
  • Curry leaves few
  • Dried red chili 1
  • Turmeric ¼ tsp
  • Chili powder 1 tsp
  • All spice powder ½ tsp
  • Salt ½ tsp
  • Cooked rice 2 cups
  • Coriander (chopped) 2 tbsp

 

Method:
For the lemon rice, heat oil, add peanuts and roast on low flame. Once the peanuts turn crunchy, add mustard, split black gram, split bengal gram, few curry leaves, dried red chili. Let it splutter. Now add ginger, green chilies and turmeric. Sauté on low flame until the spices turn aromatic. Then add cooked rice, salt and coriander, lemon juice.
For the zeera rice, heat clarified butter. Splutter cumin and dried red chili. Add cooked rice and salt, lastly add coriander.
For the tomato rice, heat clarified butter; add bay leaf, cloves, green cardamoms, cinnamon and cumin. Sauté the spices turn aromatic. Add cashews and roast until they turn crunchy. Then add onion, ginger garlic paste and sauté. Add tomato, coriander, curry leaves, dried red chili and cook until the tomatoes turn soft and mushy. Then add turmeric, chili powder, all spice powder and salt. Sauté well making sure the spices are well combined. Add cooked rice and mix well. Cover and simmer for 5 minutes. Lastly add coriander.
