Papri :

  • Flour 1 ½ cups
  • Cumin seeds 1 tsp
  • Salt ½ tsp
  • Clarified butter or butter 2 tbsp
  • Water ½ cup
  • Oil for frying
  • Green Chutney:
  • Salt ¼ tsp
  • Cumin seeds ½ tsp
  • Lemon juice 3 tbsp
  • Green chilies 6
  • Mint leaves ¼ cup
  • Coriander leaves ½ cup

Other Ingredients:

  • Yogurt 1 cup
  • Salt ¼ tsp
  • Yellow lentils 1 ½ cups boiled
  • Green chutney 2 tbsp

To Assemble:

  • Papri as required
  • Cucumber deseeded & chopped as required
  • Onion chopped as required
  • Tomato deseeded & chopped as required
  • Yogurt as required
  • Chaat masala as required
  • Fresh coriander chopped as required
  • Red chili flakes as required

 

Method:
Boil the yellow lentils with salt, strain and set aside.
For Papri, mix flour with cumin seeds, salt, clarified butter.Gradually add water and knead until hard dough is formed, cover and let it rest for 15-20 minutes.Grease your hands with cooking oil and knead the dough again. Roll out into a thin dough.With the help of a cookie cutter, cut into rounds and prick with a fork. Deep fry on low flame until golden.
For Green Chutney blend salt, cumin seeds, lemon juice, green chilies, mint leaves and fresh coriander.
Mix yogurt with salt and whisk. Mix yellow lentil with green chutney.
Top the papri with yellow lentil, cucumber, onion, tomato, yogurt, chaat masala, fresh coriander, red chili flakes and serve.

Ingredients :

  • Cottage cheese 150 gm
  • Milk 220 ml
  • Flour 200 gm
  • Sugar 80 gm
  • Vanilla essence 1 tsp
  • Eggs 2
  • Butter for frying

Method:
Blend the cottage cheese with 50 ml of the milk,till smooth and keep aside. Mix the flour with the vanilla essence and sugar as well. Make a well into the center and add in the Cottage cheese mixture and the Eggs. Continue to pour in the remaining Milk and mix till smooth.Heat up a pan, add some butter and pour about one ladle of batter. Spread it evenly & quickly and allow it to fry for 2 minutes on each side or till golden. Repeat with the rest of the batter. Serve hot with chocolate sauce, honey or maple syrup.

  • Qarshi 1/4 cup
  • Water 1 cup
  • Lemon juice as required
  • Mint leaves as required
  • Ice as required

 

Method:
In a blender, add all the ingredients and blend well. Serve.
