  • Chicken ½ kg
  • Onion (finely cut) 1
  • Ginger garlic paste 1 tbsp
  • Salt to taste
  • Red chili powder 1 tbsp
  • Turmeric ¼ tsp
  • Mix all spice 1 tbsp
  • Clarified butter ¾ cup
  • Yogurt 1 cup
  • Coriander powder 1 tsp

Ingredients for lentil:

  • Split Bengal gram (boiled) 1-1/2 cup
  • Green chilies 3-4
  • Salt to taste
  • Bottle gourd 1 cup

Ingredients for oil tempering:

  • Clarified butter 4 tbsp
  • Whole red chilies 6-8
  • Onion (chopped) 1

Ingredients for garnish:

  • Green coriander as required
  • Green chilies as required


Heat clarified butter in a pan add finely cut onion and whole all spice and slightly fry them. Now add chicken . Also add ginger garlic paste, salt, red chili powder, turmeric, coriander and yogurt and saute gravy well. Now add split Bengal gram and bottle gourd and mix well. Add 2 cup water and cook well until bottle gourd got tender. When it gets thick then remove and take out in dish and give sizzling effect. For baghaar heat clarified butter add onion and fry. Then add whole red chili and give baghaar. Garnish with green coriander and green chilies and serve with rice.

Ingredients for stock:

  • Mutton 750 gram
  • Ginger garlic paste 1-1/2 tbsp
  • Whole mix all spice 1-1/2 tbsp
  • Fennel seeds 1 tsp
  • Salt to taste
  • Red chili powder 1 tsp
  • Onion (finely cut) 2
  • Nutmeg mace ½ tsp
  • Clarified butter ½ cup

Ingredients for gravy:

  • Fennel powder ½ tsp
  • Milk ½ liter
  • Red chili powder 1 tsp
  • Clarified butter ½ cup
  • Saffron as required
  • Rose water 2 tbsp
  • Cardamom powder ¾ tsp

Ingredients for rice:

  • Rice 600 gram
  • Salt to taste
  • Mix all spice 1 tbsp
  • Fried onion ¾ cup


Put all ingredients of stock in meat and cook until meat gets half done. Then separate meat and strain stock. Stock should be ½ cup. Now in a big pan heat clarified butter and fry meat in it. Then add red chili powder, fennel seeds, cardamom powder, rose water, cooked stock and milk then cook until meat get tender and 3 cups stock left. Now add salt and mix allspice in rice and boil them until one thread left. Then take out 1 cup stock. Now first add fried onion in meat then rice then stock and last hot clarified butter. Now dissolve saffron in water and add it as well. Now let it simmer on high flame. When they get done then serve hot.
