Ingredients:

  • Mutton trotter boiled 6
  • Oil ¼ cup
  • Onion sliced ¼ cup
  • Ginger garlic paste 1 tbsp
  • Salt as required
  • Red chili powder 1 tbsp
  • Coriander powder 1 tbsp
  • Turmeric powder ½ tsp
  • All spice powder ½ tsp
  • Butter ¼ cup
  • Mutton stock 4 – 5 cups
  • Flour as required
  • Black cumin 1 tsp
  • Lemon for garnish
  • Green coriander chopped for garnish
  • Green chilies sliced for garnish

For Tempering:

  • Oil ½ cup
  • Onion sliced ¼ cup

METHOD:
Pan men oil garam onion ko halka brown ker len phir lehsan or adrak ka paste dal ker payai dalen or khoob achi tarhan bhoon len phir zeeray kay ilawa tamam sukhay masaly dal ker 1 se 2 minutes tak phir bhoon len phir thori si bakray ki yakhni dal ker 10 minutes kay liye dum per chor den phir butter dal ker khoob achi tarhan bhoon len jab butter or gravy alag alag ho jae too tamam yakhni dal ker pani men ghula huwa aata shamil ker kay 30 minutes tak dhimi anch per paknay den phir kala zeera dal ker tarka laga len.

Ingredients:

  • Fine flour 500 gm
  • Yeast 1 tsp
  • Salt as required
  • Egg 1
  • Ghee 1 tbsp
  • Soda bi-carbonate ¼ tsp
  • Water as required
  • Sesame seeds as required

METHOD:
Ek mixing bowl men till kay ilawa tamama ajza dal ker aata goondh len or phir 10 minutes tak aatay ko rest de len. Phir pairay bana ker mazeed 10 minutes tak res de len phir pairay bail ler baking dish men lagaen or upper se till laga ker pre heated oven men 10 se 12 minutes per 180C per bake kerlen.

  • Chicken with bone 500 gm
  • Clarified butter ½ cup
  • Ginger paste 2 tbsp
  • Onion paste 1 cup
  • Tomato chopped 2
  • Yogurt ¼ cup
  • Salt as required
  • Red chili powder 1 tbsp
  • Turmeric powder ½ tsp
  • Cumin crushed ½ tbsp
  • Coriander crushed 1 tbsp
  • Ginger julienned 2 tbsp
  • Green chilies sliced 2
  • Coriander chopped for garnish

METHOD:
Karahi men ghee garam ker kay chicken ko namak dal ker fry ker len. phir thora sa pani dal ker dum per chor den jab chicken gal jae to adrak ka paste dal ker chicken ko achay se fry ker len phir tomato puree, dahi or chopped tomato dal ker 2 se 3 minutes tak dum per chor den phir tamam sukhay masalay dal ker achi tarhan bhoon len phir akhir men bareek kati adrak, hari mirchen or coriander dal ker mix Karen or mazeed 1 minute tak paka ker serve Karen.

Ingredients:

  • Pearl millet flour 1 cup
  • Sesame seeds 2-3 tbsp
  • Coconut crushed 2 tbsp
  • Jaggery ½ cup
  • Water ½ cup
  • Oil for frying

METHOD:
Ek mixing bowl men gur dal ker garam pani shamil Karen or gurko melt kerlen.
Ab dosray mixing bowl men bajray ka aata, till or khopra dal ker gur kay pani se aata goondh len phir atay ko 10 minutes ka rest de ker tikiyan bana len phir karahi men oil garam ker kay halki anch per tikiyan fry kerlen.
