Ingredients:

  • Chicken mince ½ kg
  • Brown onion 1 cup
  • Yogurt 1 cup
  • Clarified butter ½ cup
  • Black cumin ½ tsp
  • Ginger garlic paste 2 tbsp
  • Salt 1 tsp
  • Coriander powder 3tsp
  • Cumin powder 1 ½ tsp
  • Chili powder 2 tsp heaped
  • Poppy seeds grinded 1 tbsp
  • Coconut grinded 2 tbsp
  • Cashew nuts grinded 8
  • Allspice 1 tsp
  • Coriander and mint leaves chopped 2 tbsp each
  • Lemon juice 2 tbsp
  • Saffron ¼ tsp
  • Milk ¼ cup
  • Green chilies 1 tbsp

METHOD:

Blend fried onion and yogurt keep aside. Heat ghee in a lagan, add black cumin, ginger garlic paste, fry and add mince with salt, cover and cook for 5 mins, add all the dry spices. Mix well, cook for 5 mins, add brown onion and yogurt mixture, cover and cook for 15 mins. Now add grinded paste with ½ cup water, cover and cook till done. Lastly add lemon juice, allspice, chopped greens, saffron soaked in milk, cook for another 2 mins, and serve with parathas.

Ingredients:

  • Boneless chicken leg (cubes) ½ kg
  • Oil 1 tbsp
  • Curry leaves 25
  • Hung curd ½ cup
  • Ginger garlic (coarsely crushed) 2tbsp
  • Oil ¼ cup
  • Onion (finely chopped) 4 tbsp
  • Green chilies (chopperised) 6
  • Salt 1 tsp
  • Chili powder 1 ½ tsp
  • Allspice 1 tsp
  • Lemon juice 2 tbsp
  • Coal to give dum
  • Skewers as required

 

METHOD:

Heat oil, fry curry leaves until crisp, keep aside. Beat hung curd, add curry leaves, crush all the rest, mix well, marinate chicken with this and dum well, leave for 1 hour, put on skewers, bake in oven with ¼ cup oil, give dum of coal and serve.

Ingredients:

  • Green gram 250 gm soaked for 5 mins in 1 cup water, boil in same water with ½ tsp haldi and keep aside
  • Oil ¼ cup
  • Ginger garlic paste 1 tbsp
  • Tomato 1 blended
  • Tomato paste 1 tbsp
  • Cream 2 tbsp
  • Butter 2 ounce + 1 ounce
  • Chili powder 1 tsp
  • Cumin (roasted & crushed) ½ tsp
  • Coriander powder ½ tsp
  • Salt 1 tsp
  • Coriander (chopped) as required
  • Green chilies (chopped) as required

 

METHOD:

Heat oil, add ginger garlic paste, fry well, add blended tomatoes and tomato paste, fry well, add boiled green gram with cream, cook for 2 mins and remove. In another sauce pan add 2 ounce butter, add dry spices, add this to the lentil, now put this lentil back to cook for 5 mins, remove in a handi, top with 1 ounce butter and chopped greens, serve with nan.
