Low Fat Tacos are for all Taco lovers who don’t want to ruin their diet but also crave for delicious tasting tacos. These are easy to prepare and you can have these without any guilt.

 

 

 

 

 

Ingredients:

  • Cauliflower 1 head
  • Oil 2-3 tbsp
  • Tortillas as required
  • Fresh coriander as required
  • Salad leaves as required
  • Cabbage as required
  • Lemon juice 2 lemons
  • Garlic mayo as required
  • Red chili powder 1 tsp
  • Smoked paprika 1 tsp
  • Cumin 1 tsp
  • Lemon juice 2 tbsp
  • Onion powder 1 tsp
  • Garlic powder 1 tsp
  • Salt 1 tsp

Ingredients for tortilla wraps:

  • All purpose flour 2 cups
  • Baking powder 1 tsp
  • Salt as per taste
  • Oil 1-2 tsp

Ingredients for assembling:

  • Mayonnaise as required
  • Cauliflower filling as required
  • Tortillas as required

 

Method:
• Preheat oven to 450 and line a large baking sheet with parchment paper.
• While the oven is heating, stir together the spice mix in a small bowl and chop cauliflower in bite sized florets.
• Then put them into a large bowl and lightly coat it with oil.
• Spread the spiced cauliflower onto the lined baking sheet.
• Bake at 450 °C for 25 minutes.
• Once cauliflower is done simply the fill your warmed tortillas.
• Add a squeeze of fresh lime and then drizzle garlic mayo and fresh coriander over top.
• Serve these hot and fresh!
