Mango Delight Recipe | Quick Recipes

This Mango Delight recipe is the simplest dessert with natural sweetness of mango!

Ingredients for Base:

  • Biscuits crushed                                          2 ½ cups
  • Butter                                                            4 ounce

 

Ingredients for Filing:

  • Mango pulp                                                 1 cup
  • Cream cheese                                             200 gm
  • Whipped cream                                          1 ½ cup
  • Gelatin                                                          2 tbsp
  • Chopped mango                                         1 cup
  • Caster sugar                                                 4 ounce
  • Mango juice                                                 ¼ cup
  • Mango squash                                            for topping

 

 

 

METHOD FOR BASE:

  • Melt butter in a sauce pan, mix in the crushed biscuits.
  • Line an 8 inches pie dish and press firmly.
  • Bake for 10 minutes on 190°C.
  • Remove it from the oven and leave it to cool.

 

METHOD FOR FILLING:

  • Dissolve gelatin in ¼ cup mango juice, keep aside.
  • Beat cream cheese, add chilled mango pulp with 4 ounce caster sugar, fold in whipped cream and dissolved gelatin. Mix all this well.
  • Lastly fold in mango cubes.
  • Pour this over the biscuit base.
  • Chill until set about 2 hours.
  • Garnish with swirls of fresh cream and mango cubes.
